- turkey breast. For this recipe, I used about half a breast of a turkey. It is big enough to feed a family of 4-6 people

How to prepare the herb butter?
Preparing the herb butter is super easy and fast, especially if you have a hand blender as a helper in the kitchen. Even if you don’t have one, you can still finely chop all the herbs and get the desired results. The first thing to start with is to make sure the butter is soft. That means it has to sit at room temperature for more than one hour. Or, use a microwave to soften it. Unfortunately, I can’t tell you what program to set on the microwave because I don’t know. I don’t own and don’t use a microwave, ever. I consider it does more harm to the food than good, so I removed it from my kitchen.
Getting back to the butter, let it become soft before using it. Wash the herbs, put the cilantro, parsley, thyme, and some rosemary needles all together in the blender and just pulse. You may also add some sage, mint, or chives.
Now put the softened butter and the minced herbs into one shared bowl. Season with salt, pepper, and some minced fresh garlic, and mix. Gently mix everything until everything becomes one. Begin the cooking process by seasoning the turkey breast with plenty of salt and ground pepper on all sides. Then simply coat the meat with butter herb, If it doesn’t stick to the meat too well, don’t despair, you just do your job. The Instant pot will do its best upon pressure cooking.
Put the meat covered in aromatic butter into the pot and add one garlic head and one onion to it for an extra aroma. Now top the meat with plenty of herbs you have left and some whole pepper such as black and red. Add one cup of water to the pot and seal the pot with the lid. Set the pressure cooking program for poultry, indicate 20 minutes, and press the “start” button. let the magic begin!
Note: the cup of water added is for the gravy. If you don’t intend on making gravy for the turkey breast, you may avoid adding water to the turkey upon pressure cooking.

How to make gravy for the herb butter turkey breast?
You will see lots of liquids left in the instant pot, that is exactly what you need to make the gravy. Use a sieve to strain the liquid. Discard the herb part. You will notice that the melted fat, which is mostly the butter we’ve used before, sits like a hat on top of the juices you’ve just strained. Take a saucepan and set it on medium heat. Use a spoon to take that fatty hat and pour it into the saucepan. As soon as it starts boiling, add one tablespoon of flour and always stir. Then, pour the liquid from the cooking. You may add one teaspoon of soy sauce for color and taste. Let everything simmer for a couple of minutes on low heat then turn off the stove.

- 5 tbsp butter unsalted
- 1 hadfull fresh herbs parsley, thyme, cilantro, rosemary needles
- 1 head garlic
- 1 medium onion

- Wash and blend the herbs using a hand blender
- Mix softened butter with herbs. Season with salt and ground pepper
- Season turkey breast with salt and pepper
- Cover the meat with herb butter
- Place meat in the instant pot and add the onion and garlic
- Add one cup of water if plan to make gravy, if not – skip the water
- Seal with the lid and set pressure cook for 20 minutes
- Release the steam and open the lid
- Roast the meat for additional 10 minutes in the preheated oven or in an air fryer
- Serve with gravy or other sauce
