Since the sandwich can be made in just a few minutes, begin with boiling eggs.  

Meanwhile, slice keto bread. For this recipe, you will also need good and ripe avocado. To choose the right avocado, read our article. So grab a ripe avocado and cut it in halves. Remove the pit and spoon out the flesh of an avocado. Ripe avocados should peel off easily.  Smash the flesh using a fork. Add a splash of olive oil and season with salt and pepper. Mix to combine everything.

Keto Avocado Sandwich with EggsOnce eggs are boiled hard, peel them, starting at the large end. Grate hard-boiled eggs through the tight slots of a cheese grater. Also, grate some cheese. This time, I found a piece of truffle cheese in my fridge. 

To assemble the sandwich, first top the bread with smashed avocado. Top with some grated cheese and then with eggs. Sprinkle some chili flakes if desired.

Ingredients
  

  • 2 avocados
  • 2 slice keto bread
  • 2 tbsp gouda (grated) or any cheese
  • 1 tsp olive oil
  • salt and pepper to taste
  • 2 boiled eggs hard

Instructions
 

  • Boil the eggs hard.
  • Slice the bread.
  • Grab a ripe avocado and cut it in halves. Remove the pit and spoon out the flesh of an avocado. Smash the flesh using a fork. Add a splash of olive oil and season with salt and pepper. Mix to combine everything
  • Grate hard-boiled eggs through the tight slots of a cheese grater. Also, grate some cheese.
