With Thanksgiving day around the corner, I’m back with an easy and delicious turkey recipe for you! This recipe is a great alternative for those who are short on time preparing the holiday table’s centerpiece. It is cooked in an hour, unlike the whole turkey, which requires much more time.

How to make the mushroom filling for the Turkey Roll recipe? 

Lately, I have become so addicted to my Instant Pot and the air Fryer that most of my dinners are made in them. These two are perfect kitchen items that help you save time and prepare any meal with less effort and without mess. So, today I decided to prepare the turkey roll recipe in Instant Pot, filling including.

The filling preparation will not take much of your time and can be prepared easily ahead of time. Chop vegetables into small to medium chunks. Slice Bacon.

Set the Instant Pot on saute program. Add two tablespoons of olive oil. Once hot, add minced garlic, chopped onion, leek, and carrot. Saute until vegetables soften (about 5 minutes), and then add chopped mushrooms. Season everything with a pinch of ground pepper, salt, garlic, and smoked paprika. Cook, for another 10 minutes, until vegetables are soft, mixing constantly. Once cooked, transfer the filling to a plate and set aside.

Continue cooking in the same pot and on the same program. Add bacon to the pot and fry it until browned, and the fat has melted. Transfer the bacon to a separate bowl.

How to butterfly the turkey breast?

This technique is used to slice the breasts as to create uniform thickness, which is best for quid and even cooking. Also, when you create the shape of a butterfly, it is very easy to stuff the meat with any fillings. Therefore, take a sharp knife in one hand, use the second hand to press on the breast. Start cutting all the way down the long end of your piece of meat, making sure not to cut all the way through. (watch the video for detailed instructions). Now open the cut like a book.

To stuff the breast easier, we have to flatten it a little. Therefore, cover the butterflied breast with a sheet of cling film to make less mess. Using a meat mallet, pound lightly with the flat side until the turkey is even thick. Make sure you do not tear through the meat. Season with salt, pepper mix, ground coriander, and garlic on both sides.

How to make Turkey Roll?

Once you have butterflied the turkey breast, it is time to stuff it and roll. ​​Spread mushroom filling evenly over the surface of the butterflied breast, leaving about 1/2″ at the borders. Top with fried bacon and sprinkle chopped parsley. Start rolling the meat tightly, starting with the long end. To have everything sealed better, secure the border with some toothpicks. Set the Instant Pot at saute mode. Transfer the turkey roll in a clean pot with 2 tablespoons of olive oil. Brown on all sides. Add ¼ cup of water and close the lid. Change the program to pressure cooking mode on high for 10 minutes.

When time elapses, release the steam and then open the lid. Transfer the turkey roll to a plate or cutting board. Brush the meat with pan drippings to infuse it with even more flavor. Slice and garnish with fresh herbs if desired.
