A fresh and light salad recipe made only of cucumbers, coated in a lot of flavours and aroma. Asian cucumber salad is one of those easy side dishes you want to serve next to any meat.

Why do you think cucumbers could be that tasty? Or why this cucumber salad can satisfy my cravings? These are the question you may have, but the secret here lies in the aromatic dressing that coats all cucumbers and makes them taste unbelievable. Simple, easy, but such a delicacy.

I adore cucumbers as they add crunchiness and healthiness to any food. This salad caught my eye, and it turned out to be tasty and light. I love Thai food as it always combines sweet flavours with an earthy taste and makes a great duo together. A simple recipe may turn out to look and taste fabulous if you add honey, chilli pepper, or soy sauce. This kind of cuisine combines aromas that you can’t imagine but create a delicious taste, and when you taste, you remain wordless.

Should you peel a cucumber? 

It is a debate question. For example, I like to leave the skin on the cucumber as it looks more elegantly in a salad. However, I wash it in warm water to avoid any dirties.

How to make cucumber salad?

Nothing complicated or chef-like studies. A simple move: cut the cucumber rounds and make the dressing. 

As I have already mentioned, the dressing makes it all. So if you find some intolerance to any ingredients, just feel free to skip or replace them with anything you like. 

The dressing has an Asian sour/bitter taste that nicely pairs with sweet cucumbers. 

Asian Cucumber Salad Ingredients

The ingredients:

Two big cucumbers

2-3 spring onions or 1 red onion

Cilantro or parsley 

Sesame seeds or any other nuts you have

For the dressing:

2 tbsp Sesame oil (the toasted or regular one)

2 tbsp Soy sauce

1/2 lime juice

1 tbsp Fish sauce ( it is too pungent, so don’t add more)

One minced clove of garlic

1 tbsp sugar ( I have used brown sugar)

Seasoning at taste

Take a cutting board and cut rounds the cucumber. Take a bowl and add them to it.

Chop spring onions and add to the bowl with cucumbers. Watch the video below

In a small separate bowl, whisk all the ingredients for the dressing. Whisk well until the sugar has dissolved.

Pour the dressing over the bowl with cucumbers.

Top sesame seeds.

Take a plate and nicely arrange the salad. 

I have added a pinch of pepper flakes for spiciness and colour.

This light and fresh salad can be a great pair to meat, fish, or even potatoes.

Cucumbers are healthy to eat as well as fresh to enjoy, especially when it’s hot outside. This crunchy veggie pairs excellent with many other vegetables, and you can cook it in many ways. 

I think in salads, cucumber tastes the best along with a tangy dressing.
