Transfer the dough to the working surface and form a ball.
Divide the dough into 2 balls. Grab one ball and roll out the dough between 2 pieces of parchment paper (see the video for instruction). Make sure you roll it not thinner than 1/4 inch thickness. Shape the cookies using cookie cutters. Gently transfer the cookies to a parchment-lined baking tray. Sprinkle generously each cookie with the spices mixture. Repeat with the remaining dough.
Meanwhile preheat the oven to 350° F. Bake the gingerbread cookies on the middle rack of the oven for about 10-12 minutes. Once baked leave them to rest on the baking tray for about 5 minutes. Then carefully transfer cookies to a wire cooling rack to cool completely.
