I do not know how you do, but with the arrival of fall, I get in the mood of organizing my home cozy, brew aromatic tea and fill the house with the aromas of freshly baked treats! So, after today’s downpour, I realized that my evening cup of coffee must be accompanied by something very delicious! Therefore, catch a recipe for a simple and bombastically delicious coffee cookie: it melts in your mouth, not in your hands! They are deliciously fragrant and soft, especially if paired with a cup of coffee or warm milk, with a great aroma that will be everywhere.

So, this coffee cookie recipe became one of my favorites. These soft cookies enhanced with aromatic coffee are so tasty that sometimes it is hard to stop eating them. It is a perfect treat when you feel like eating something sweet and tasty.

Coffee cookiesThe recipe is quite simple and, if you like the aroma of the coffee, you must definitely try them. For easier shopping, find below the short list of ingredients:

Unsalted butter at room temperature (soft) – 10,5 oz

Icing sugar – 1 cup

All-purpose flour – 2 ¾ cups

Freshly ground coffee – 1 ½ tbsp (grind in a coffee grinder, sift through a fine sieve)

Egg white – from one large egg.

How to make Homemade Coffee Cookies?

Probably a lot of people avoid baking cookies at home, thinking that is too hard and difficult. But I assure you that reading this recipe is longer than backing.

Coffee cookiesBefore you start mixing the ingredients preheat the oven to 320°F. Line a large baking sheet with parchment paper. Attach your stand mixer with a flat beater attachment.

In a stand mixing bowl stir the icing sugar, sifted all-purpose flour, and freshly ground coffee. Add in soft unsalted butter and start mixing the cookie dough at low speed. Once all ingredients are incorporated add one large egg white. Continue mixing until everything comes together.

For note: if you do not have a stand mixer, this process can be easily done with your hands, or using a silicone spatula in a regular bowl.

Transfer the coffee dough to a piping bag attached with any desired nozzle. Grab prepared baking sheets and pipe any desired form of cookies keeping them 2 inches apart. Bake in a preheated oven for about 15-20 minutes, depending on the size of your cookies! Before serving, allow cookies cooling completely, then make an aromatic coffee and … enjoy!
