As the name suggests, for this absolutely delicious recipe, you will need boneless pork chops. One pork chop should feed one person, therefore, make your calculation as to how many people to cook. I’m sure you know, however, I will write about it over and over again – always buy fresh meat. Make sure it has a pinkish color and a firm texture. The meat should be steaky upon touching. 

The next key ingredient for this delicious pork recipe is the mushrooms. For this specific time, I used the Champignons mushroom because I found them fresh and nice-looking, and I just couldn’t pass by them. However, if you find fresh porcini mushrooms, don’t think too much – take them. Porcini taste and aroma is more intense, it is wood flavored and it enriches any dish. At the same time, the regular champignons will do a great job for this recipe. Here as well, make sure to avoid buying rotten and old mushrooms. They have to be white and form upon touching.

The heavy cream is also a key ingredient for this pork chops with mushrooms gravy recipe. The role of the heavy cream is to blend all the flavors of the dish and make the gravy even more creamy and finger-licking. 

The butter and the olive oil, these two work great together. The butter complements the olive oil and the tastes don’t come head-to-head either in texture or in taste. 

Next on, the onion and the garlic. These two ingredients are great companions to meat dishes, so I never miss them. I like how the dish gets different layers of taste and flavors from basic ingredients such as the onion and the garlic.

Some people add broth to form the gravy, however, just like I previously said, the dish is already very rich, so I like to keep it the way it is. Too many mixed aromas can transform a good recipe into an exaggeration. Therefore, I add boiled water instead of broth, believe me, the final taste is a delicacy.

As I always say, use the spices you trust, the ones that complement each other. If you’re not sure what to use for this combination, try my advice. Salt, pepper, and granulated garlic. The dish is made out of very complex ingredients: pork chops, mushrooms, and heavy cream, you don’t need much help from the spices, therefore, I use the minimum.

How to fry the pork chops in Instant Pot?

Turn on the pot and select the “saute” program. Pour 3-4 tablespoons of olive oil and wait for it to get hot. As soon as the pot gets to the right temperature it will make a beep – the sound notifying you that you can start frying the chops. 

Until that happens, season the chops with salt and pepper on both sides. 

Add the pork chops and fry them on each side for 4-5 minutes. They should be lightly brown on each side. If you have more chops to fry, take out the golden ones, place over a plate, and add to the hot oil the remaining pieces.

In the meantime, peel and finely chop two onions, and 4-5 garlic cloves. 

Once you’re done frying all the chops, use the same oil to saute the minced onion and garlic. My advice here is to turn the heat to “low” on the pot because I found it too hot and it was burning the onion. When the onion has softened, that takes about 2-3 minutes, it’s time to mix in the sliced mushrooms. Don’t cover the pot with the lid. The mushrooms will leave their vegetation water, wait until it evaporates. That’s how you know they’re cooked. 

Put the mushrooms in a bowl and get to the next step of the prep – the gravy! Mmmm…. Instant Pot Recipes are simply delicious.

How to prepare the gravy for the creamy pork chops with mushrooms?

When you have extracted all the mushrooms from the pot, it’s time to get to the creamy part. Add 5 tablespoons of butter and wait until it melts. Then add 1 big spoon of all-purpose flour. Make sure you mix well to avoid the formation of clumps. Let the composition brown for about 1 minute then add the heavy cream, stir again. When you see it starts simmering, add 1 cup of boiling water. At this point season the graving with salt, pepper, and granulated garlic. Taste the composition to see if the taste is just how you want it to be. 

When the gravy is ready, transfer the pork chops and the mushrooms back to the instant pot. Let the pork chops with mushrooms gravy cook all together for additional 5 minutes. Turn off the instant pot.

How to serve the pork chops with mushroom gravy?

Pour the creamy deliciousness along with the meat chops in a large bowl, sprinkle some chopped parsley on top and serve with mashed potatoes, basmati rice, or alone with a refreshing tomato salad. This hearty dish goes perfectly with some pickles or marinated tomatoes.   • 4 chops pork boneless
  • 20 oz mushrooms champignons
  • 8-10 oz heavy cream
  • 1 cup water
  • 2-3 tbsp olive oil
  • 5 tbsp butter
  • 1 tbsp flour
  • 2 medium onions
  • 4-5 cloves garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp granulated garlic

Instructions
 

  • Turn on Instant Pot, select the "saute" regime
  • Pour in the oliove oil, wait until it gets hot
  • Season pork chops with salt and pepper
  • Fry the chops for 4-5 on each side then set aside
  • In the meantime, peel and finely chop the onion and the garlic
  • Add the chopped onion and garlic to the pan
  • Sautee for about 2 minutes
  • Add the sliced mushrooms, cook for about 5-7 minutes or until the water evaporates
  • Take out the mushrooms and place on a plate
  • Add the butter and wait until melts, then sift in the flour
  • Mix well and wait for the composition to become lightly brown
  • Pour in the heavy cream and mix, then add water. Let simmer for 3-5 minutes
  • Add to the pot the mushrooms and the chops. Mix and cook for additional 5 minutes
  • Serve with pleasure!
