The awesome part of this recipe is that you can have the cherry tomatoes preserved. If you choose to sautee them and hermetically close in glass jars, you will have a delight available at any time.

The marinated cherry tomatoes are flavored tomatoes with the spices and aromas you like most. I chose garlic, parsley and basil, and dried Italian herbs. I simply adore the Italian herbs and I find these herbs to be the best pair to tomato dishes. However, you can use whatever herbs you like most.

Ingredients for 300 gr of final marinated tomatoes:

  • 500 gr of colorful cherry tomatoes or grape size
  • 3/4 cup olive oil (extra virgin)
  • 6 cloves of garlic
  • Handful fresh parsley
  • Handful fresh basil
  • Italian dry herbs 1 tbsp
  • Salt
  • Pepper
  • 2 tbsp white wine vinegar

How to marinate tomatoes?

This recipe is perfect for those who don’t like spending too much in the kitchen or for those who are first experiencing. 

Initiate the cooking process by rinsing the tomatoes and the herbs, and by peeling the garlic. Then slice the tomatoes in half and place them in a large bowl. Then chop the herbs and the garlic and place them in a separate bowl. That’s where the dressing will be done. Pour over ¾ olive oil and 2 tablespoons of white wine vinegar. The season with salt and pepper. Mix well and pour the freshly made dressing over the cherry tomato halves. Gently mix and let marinate for 4 hours. 

For a more beautiful presentation place the marinated tomatoes in glass jars with lid. You can let the cherry tomatoes marinate overnight for a stronger flavor. 

This is a perfect dish when served shortly after preparation and even better when served the second day. Either way, the recipe is a must-try!

How to preserve cherry tomatoes long term?

If you wish to preserve the tomatoes for a longer period, they have to go through heat treatment in order not to spoil.

To prepare the marinated cherry tomatoes for long term preservation you should follow a few simple steps. Start by washing the tomatoes thoroughly. Then remove the stalk and cut the vegetables in half.

Take a large skillet then pour a generous amount of olive oil, about ¾ of a cup, and put it to heat. Peel the garlic and finely chop it. When ready, add it to the olive oil together with the parsley and basil, also minced. When the delicious aroma has spread, it’s time to add the tomatoes to the skillet with the herbs and garlic. Season everything with salt and pepper to the taste you like and cook everything at medium heat for about 10 minutes. Do not cover the skillet, let the juices evaporate a bit. Also, remember to mix occasionally, just be gentle when you do it, making sure not to crush the beautiful halves. 

When the 10 minutes of sauteeing expire, move the skillet from the stove and let the flavorful composition completely cool. In the meantime, sterilize the glass jars and set aside till filled with the aromatic tomatoes.

Now that the tomatoes are at room temperature, pour them into the jars and top it with the cooked herbs and garlic. Close the jars and move them to a dark and cool place for best preservation. 

Colorful, tasty, and very aromatic marinated cherry tomatoes are simply too good not to preserve, at least for a few days.

  • 3/4 cup olive oil
  • 6 cloves garlic

  • 2 tbsp white wine vinegar

  • 1 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Rinse the tomatoes and slice in half. Place in a large bowl
  • Peel the garlic and wash the fresh herbs. Chop everything and place in a separate bowl
  • Pour ¾ olive oil, 2 tbsp of white wine vinegar, 1 tbsp dried herbs, salt, and black pepper over the herbs. Mix well
  • Pour the freshly made dressing over the cherry tomato halves. Gently mix and let marinate for 4 hours.
  • Place the marinated tomatoes in glass jars with lid
