Turn on Instant Pot, select the "saute" regime
Pour in the oliove oil, wait until it gets hot
Season pork chops with salt and pepper
Fry the chops for 4-5 on each side then set aside
In the meantime, peel and finely chop the onion and the garlic
Add the chopped onion and garlic to the pan
Sautee for about 2 minutes
Add the sliced mushrooms, cook for about 5-7 minutes or until the water evaporates
Take out the mushrooms and place on a plate
Add the butter and wait until melts, then sift in the flour
Mix well and wait for the composition to become lightly brown
Pour in the heavy cream and mix, then add water. Let simmer for 3-5 minutes
Add to the pot the mushrooms and the chops. Mix and cook for additional 5 minutes
