How to Butterfly Chicken Breasts?
Most stuffed chicken breasts require to butterfly the meat. Usually, I cut it through horizontally about 3/4 of the way. But today, I have used another cut method to ensure the filling will not leak. I made the pocket on the top side. Watch the video for the technique. Ensure you do not completely cut through the other side of the breast. This is an excellent way to stuff chicken with your favorite fillings.

To make this keto bacon cheese stuffed chicken breast, first of all, you will need fresh and qualitative boneless, skinless chicken breasts. Prepare the poultry and set aside till you prepare the ingredients for the stuffing.
The filling combines pretty simple ingredients; cream cheese, bell pepper, bacon, and slices of light cheese. Make sure the cream cheese you use is at room temperature. Bacon and bell pepper add a nice flavor. So you can use just salt and pepper for this dish. But I like more sophisticated tastes and extra flavor, so I seasoned the chicken breast with Old Bay seasoning.
Cut bacon in medium-size stripes. Slice bell pepper.
Grab chicken breast and make the pocket for stuffing. Spoon cream cheese into each chicken breast evenly. Top generously with bacon.
Grease IP pot with some olive oil. Transfer the stuffed breast into it. Top with sliced bell pepper. Season generously with Old bay seasoning. Top with sliced cheese. Seal the instant pot with a lid and cook on pressure for 15 minutes.

Do you have time and temp for air fryerm
You can try making this recipe in the air fryer for 15 minutes at 320F (160C). I have never tried making chicken in an air fryer as I am afraid it might come out dry.
