In my opinion, any pear will work for this recipe. But Anjou and Bosc are great for baking because they hold nice shape and texture!

How do you make Roasted Pears with Cashew Sauce?

The roasted pears with cashew sauce take just 7 ingredients and less than 10 minutes to put the ingredients together. For the rest 20 minutes, you will train your patience. The good news about this recipe is that no processed sugars are used. It is the best of the best and the healthiest desserts you can make. The cashew sauce with cardamon adds smoothie texture and warm fall flavors.

Roasted Pears with Cashew SauceFirst, we have to take care of cashew sauce. To get smooth and nice cashew sauce, you have to soak the nuts. So, transfer the nuts to a bowl, cover them with cold water and let soak overnight. In case you have no time or forget to make this in advance, then soak the cashew in warm water for at least one hour.

Roasted Pears with Cashew Sauce

Once you have cashews hydrated, drain and rinse them. In a food processor, ground about 4-6 whole cardamom pods. Then transfer nuts to a food processor along with cardamon. Now make sure to grab a soft and pliable vanilla bean. Otherwise, before using, soak it for 10-15 minutes in lightly warm water. Cut the vanilla in half and then split each piece down the center using a sharp knife. Make sure you scrape out all of the seeds. Add vanilla seeds to the blender along with the cashews. Moreover, pour along with nuts, maple syrup, and almond milk. Process until creamy and smooth. Set aside.

Now it is pears time. Preheat the oven to 375 °F. In a mixing bowl, stir together maple syrup, lemon juice, and ground cardamom. Grease the bottom of a baking dish with butter.

Roasted Pears with Cashew Sauce

Wash and pat dry the pears. Cut them in half, remove the peel and core. Generously toss them in the maple syrup mixture. Place the pears cut-side down in the baking dish. Pour any remaining maple syrup mixture over the pears. Sprinkle small pieces of butter, almond flakes and 4-5 whole cardamom pods on the top of the fruit. Transfer to the oven and bake for about 15 minutes. Then gently turn them over and continue roasting for 10 more minutes, until soft and tender.

Serve baked pears warm topped with cashew cream and some tosed almond flakes.

Ingredients
  

  • 2 pear
  • ¼ cup maple syrup
  • 1 tbsp fresh lemon juice
  • 1/2 tsp ground cardamon
  • 4-6 whole cardamom pods
  • 1 tbsp butter for greasing
  • ¼ cup almong flakes

Cashew Sauce

  • 1 cup raw cashews
  • ¼ cup maple syrup
  • ¼ cup almond milk
  • ¼ tsp ground cardamom
  • vanilla bean
  • 4-6 whole cardamom pods

Instructions
 

  • Preheat the oven to 375 °F. In a mixing bowl, stir together maple syrup, lemon juice, and ground cardamom. Grease the bottom of a baking dish with butter.

Cut the vanilla in half and then split each piece down the center using a sharp knife. Make sure you scrape out all of the seeds. Add vanilla seeds to the blender along with the cashews. Moreover, pour along with nuts, maple syrup, and almond milk. Process until creamy and smooth. Set aside
