Classic potato soup is an ultimate dish loaded with veggies and a lot of cheese. Creamy and cheesy, this soup is one of my favorites fall comfort food.

It may sound cheap and not fancy, but a potato soup loaded with veggies, cheese, and topped with fried bacon is something unreally delicious.

Potato SoupWell, I try to make soups at home frequently, especially creamy soups. I try to convince my daughter that they are essential and tasty. That is why very often I have to invent something healthy and delicious, as well as nice-looking. So, today a bunch of potatoes from my pantry remind me that I didn’t cook a classic potato soup for a long time. This easy-to-make dish that is filled with cheap ingredients tastes unbelievably delicious and hearty.

Veggies with a lot of cheese and bacon – I assure you – all these ingredients combined create some bursting tastes and flavors.  No one will resist a bowl full of deliciousness. Not only a plate of meat or fish will look elegant and fancy. I love the colors this soup has while served and the authentic potato taste mixed with veggies and bacon.

Ingredients for Potato Soup:

Potato SoupThis damn delicious hearty and consistent potato soup is just the perfect dish for the cold evenings. The recipe is pretty simple, and the ingredients you will need are few and basic. And the best about this potato soup is that it can be easily customized to anyone’s taste. We have already Catch below the short list of ingredients:

  • Potato – is the core ingredient in this recipe. First, neve grabs sweet potatoes. The best option is Yukon gold potatoes. However, russets or red potatoes will taste nicely here too. Potato Soup
  • Vegetables – here you can go with anything you like. For today’s classic potato soup, I have used a combination of vegetables that always make a base in my soup recipes – yellow onion, carrots, and celery.
  • Chicken broth – the broth will enrich even more the lovely taste. If you are making vegetarian potato soup, substitute broth with veggie stock or even water.
  • Butter, flour, milk – all these ingredients you will need for the white sauce. We will use this sauce to thicken the soup. If you like a lighter soup, just skip this step and puree part of the soup to thicken it a little.
  • Sour cream – to enrich the soups and for an even more fine consistency.

  • Toppings – optional you can add crunchy bacon, cheddar cheese, green onions, or croutons.

How to make Potato Soup:

Potato soup is one of the tastiest ways to cook potatoes. Even kids will not remain indifferent to this recipe. Today, I will share the perfect potato soup recipe that can be easily customized to anyone’s taste.

Peel and dice potatoes, carrots, celery, and onions. Combine diced vegetables with chicken broth in a large pot and season with salt and pepper if needed. Bring to a boil over high heat, then reduce heat to slow-medium, cover the pot and let it cook for about 15 – 20 minutes (or longer if needed, until potatoes are very soft).

Potato SoupMeanwhile, melt butter over medium heat in a small saucepan.  Add flour, whisking constantly, and cook for about one minute. In a minute, while whisking, slowly pour milk and cook until the mixture begins to thicken.

Once veggies are soft, incorporate thickened milk mixture to potato soup mixture and stir. While cooking, make sure you stir the soup regularly so that the bottom does not burn. Add sour cream and blend the soup until completely smooth. Taste and season the potato soup if needed with salt and pepper.

  • 6 cups potatoes peeled and diced
  • 1 onion
  • 1 carrot peeled and diced
  • 2 stalks celery
  • 2-3 cup chicken broth
  • 1/3 cup butter
  • 1/3 cup flour
  • 2 cups milk
  • 1/2 cup sour cream
