How to make chicken mushroom?
For this dish I have bought 4 boneless chicken thighs that were already marinated. When I have more time for cooking I definitely go for my home-made marinade, but this time I have chosen an already marinated chicken. Before cooking, I always try to have all my ingredients at room temperature.
First of all, I fry my mushrooms. I never wash them as I have read in many food blogs that washing the mushrooms is incorrect. For Note: in case you wash your mushrooms do not leave them too much in water as they will absorb too much water and the result will be tasteless, so just rinse and split them well.
In a skillet fry the mushrooms with some garlic butter about 7-10 minutes, until the water has evaporated. Remove them from the skillet, add some garlic and some drops of olive oil and bake the chicken tights until they are golden brown to perfection with a crispy skin. Usually, no more than 10 minutes on each side. When the chicken is almost ready, take them from the skillet and slice them. Okay, this is optional, but I love to serve smaller portions of chicken on a plate. Return the mushrooms and chicken into the skillet and pour the cream with 2 more cloves of garlic and fry at a medium heat for no more than 7 minutes, or until all the flavors have combined and the aroma it emanates is mouth-watering. Season with sea salt and black pepper, and garnish the dish with some fresh herbs.

For Note: when I cook the sauce I add some dry white wine, but in case you want to skip it – you can freely add some chicken broth. How to make cream of chicken mushroom?
I add the cream already in the skillet where I combine the fried mushrooms and chicken. Their mixed aromas with mashed garlic and cream, refreshed with some wine, are divine. I do not add parmesan to this creamy sauce as the fried chicken is already marinated and infused with intense aromas, so I skip the cheese for this recipe. I consider that parmesan here only adds calories, because my dish is already seasoned and salty.
This sauce is everything here, flavored with juicy aromas from the mushrooms and chicken.
What wine to serve?
When it comes to wine this is my best part to describe. I adore to serve a qualitative glass of wine during my dinners with my husband. This adds a romantic and lovely air.
For this recipe I would say that a red glass of wine like Cabernet Sauvignon or Merlot – both not too pungent but dry – will suit this hearty and satisfying dish. But, for white creamy sauces I usually drink white wines like Sauvignon Blanc or Pinot Gris. I rarely drink red wines, but if I do – I drink only dry qualitative red ones.
Creamy Chicken Mushroom Recipe Tips:
- Use only qualitative/organic meat. I used organic chicken thighs.
- Make sure your meat is well-done cooked, as it is not a steak, and you don’t want to serve a raw meat. This is the point I usually cook chicken thighs for this recipe – they are cooked quicker and evenly.
- Avoid parmesan. Or, in case you still like to add it in your recipe add the grated qualitative parmesan.
- Substitute the wine with a chicken broth.
- Add sour cream, or any kind of milk you like – I always go for a heavy/fatty cream for this recipe.
- Use any kind of mushrooms you like – I have used champignons.

Creamy Chicken Mushroom

Ingredients
- 4 chicken thighs
- 1 pack heavy cream
- 1/2 glass white wine
- 4 tbs butter
- 12 oz mushrooms
- 4 cloves garlic
- cilantro
Instructions
- In a heated skillet add 2 tsp of butter and one clove of minced garlic and fry the mushrooms.
- Fry the mushrooms about 7-10 minutes. Set aside.
- Fry the chicken thighs until they are golden brown to perfection. Fry about 10 minutes on each side. It depends on what type of chicken you are making.
- Cut the thighs in small portions.
- Return the chicken and the mushrooms into the skillet and pour over the cream with 2 more cloves of garlic and fry at a medium heat for no more than 7 minutes
- Season with salt and pepper.
- Garnish with some cilantro.
