Over time I made various recipes for sweet breakfast – Cottage Cheese Pancakes, Waffles, Crepes, Muffins but this time I wanted to use one of the ingredients that many of us often throw away – bananas. I am more than convinced that you always have bananas in the kitchen, and you usually throw out some of them. Once the bananas start to turn black, nobody wants to eat them anymore. They seem unappetizing and too sweet. In this case, the perfect solution is Banana Bread or fluffy Banana Pancakes.
My kids adore Nutella, and even knowing that it is not the healthiest food, sometimes I had to give up and let them delight in their cravings. And I think I found an excellent solution to combine soul food with a healthy one – Banana Nuttela Pancakes. How to make Banana Nutella Pancakes?
Nutella Pancakes with Banana is a quick breakfast recipe when you crave a soul and indulgent food. If you are a fan of pancakes, definitely try this easy recipe. Most Nutella Pancakes recipes require a little bit more time and effort than simple pancakes. I simplified the making process to earn time and simply toped pancakes with Nutella chocolate. I also think that stuffed pancakes contain more chocolate. So, following my recipe, you can adjust the chocolate to your taste and control the Nuttela amount your kids will eat.
The batter for these banana pancakes is simple to make. And to fasten the process, even more, I used the hand blender.
Start making the pancakes by crushing 2 small bananas with your hand blender. They should be ripe as possible. Then beat in three eggs. Next, stir in gradually 2 tablespoons milk, 2 tablespoons melted unsalted butter, and 1/2 cup of greek yogurt.
In a separate bowl, mix dry ingredients – ½ cup all-purpose flour, 2 teaspoons of baking powder, 2 tablespoon sugar, and a pinch of salt.
Using your hand blender again, now attached with a whisk, incorporate dry ingredients into the banana-egg mixture. Do not mix much, just until all ingredients homogenize, otherwise you will get some dense pancakes.
To bake the best pancakes is better to use a pancake pan or nonstick pan. Heat the non-stick frying pan over medium heat without any fat. If you are not sure about your pan, then grease it with some coconut oil. Using a 1/4 measuring cup, spoon batter onto preheated pan. If you want smaller size pancakes, just use a tablespoon. My kids adore small pancakes. Cook pancakes until it forms bubbles, then flip it with a thin spatula on the other side and cook for 60 – 90 more seconds.
To serve, spread each pancake with Nutella chocolate and top with some slices of banana.
