Many times I am in dilemma about what to prepare for breakfast. My family prefers to serve for this important meal both savory and sweet dishes. It should look attractive and at the same time be hearty. Sandwiches, the famous Benedict eggs, or the French Croque madame and Croque monsieur are often on our menu.  Recently I have prepared some delicious Pancakes, hearty English muffin pizza, fluffy Blueberry breakfast cake – but these keto waffles are also absolutely mouth-watering.  This recipe is also welcomed in our family as we can top waffles both with savory and sweet toppings. Colorful and fluffy waffles topped with various adding will make your day with no doubt.

Lately, waffles become popular for breakfast in many world pastries even in China. The new trend of eating healthy food has put a serious footprint on many recipes, these becoming healthier. So today I decided to share with you one of them, no sugar and no gluten great recipe of Keto waffles. 

Ingredients:

Keto waffles recipe is easy to make and requires just a few ingredients, that most probably you already have in your pantry if you are on a ketogenic diet. I also like this recipe because waffles are made quickly and easily. Just 30 minutes and you have your waffles done. It is very important to have all the ingredients at room temperature, especially eggs. The butter you use must be full-fat. Anyway if you are following a vegetarian diet you can substitute it with coconut oil.

Keto waffles1 cup of almond flour – now it is easy to find almond flour on the market shelves. In most organic and vegan shops you will find this ingredient. It also can be easily made at home by grinding whole almonds or almonds flakes. Almond flour can be substituted with coconut flour or other nuts flour that you have on hand.

2 eggs – eggs are often used in ketogenic diet as they have no carbohydrates, moderate amounts of fat, and supply the recipe with proteins. In this recipe egg also help to bind the dough.

6 tablespoon of melted butter – to make waffles even more flavorful instead of melted butter I made Beurre noisette. Does it sound scary? Actually, it is just melted butter longer than usual! So, boil the butter till it stops “singing”, get a golden color with hazelnut scent. Substitute just melted butter with Beurre noisette in your pastry recipes and feel the difference.

1 tablespoon stevia or another sugar substitute. If you are going to serve waffles with savory toppings just omit the sweetener.

1 tablespoon baking powder.

A pinch of salt

What makes these waffles keto-friendly? 

All ingredients used in this keto waffle recipe are keto-friendly. Almond flour greatly substitutes the regular flour. Stevia does a great job instead of sugar. Full-fat butter, alongside almond flour, shredded coconut provides healthy fat. Egg supplies with protein. Besides the fact that this recipe is totally keto-friendly, it will keep you hearty and satisfied for hours.

How to make Keto waffles?

Keto wafflesTo bake these Belgian waffles, you will need a waffle maker. These are relatively easy to find on the market shelves and are not expensive either. Mine is making beautiful heart-shaped waffles. 

Before you will start make sure you have all ingredients at room temperature. Then prepare Beurre noisette or just melt the butter. Transfer it to a mixing bowl and cool a little. Once it is cooled whisk in eggs. Now gradually add almond flour, shredded coconut, sweetener, baking powder, and a pinch of salt. Mix all ingredients well until homogenize. You should obtain a batter with a like-sour cream texture. 

Preheat your waffle maker, before lightly greasing it with vegetal oil. Spoon enough waffle batter into the waffle maker and bake according to the manufacturer’s directions. Usually, it takes 3-5 minutes. When done, carefully remove waffles with a fork or kitchen tong. Repeat until all the batter has been used.

As a serving option, your imagination is the limit. You can add ground nuts, fresh fruit, various no sugar berry sauces, keto-chocolate, or even peanut butter. A great real ketogenic topping can serve some whipped mascarpone or cream with some sugar substitute.

  • 6 tbsp melted butter
  • 2 tbsp shredded coconut
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp stevia
  • pinch of salt

  • Melt the butter. Transfer it to a mixing bowl and cool a little. Once it is cooled whisk in eggs. Now gradually add almond flour, shredded coconut, sweetener, baking powder, and a pinch of salt. Mix all ingredients well until homogenize.
  • Preheat your waffle maker, before lightly greasing it with vegetal oil. Spoon enough waffle batter into the waffle maker and bake according to the manufacturer’s directions. Usually, it takes 3-5 minutes. When done, carefully remove waffles with a fork or kitchen tong. Repeat until all the batter has been used.
  • Serve warm with the favorite topping!
