For the best results, make the dough for the pancakes starting by preparing the cottage cheese in a special way.  For that, wipe the cottage cheese through a frequent sieve in a bowl. If the cottage cheese is too wet, flip it onto cheesecloth, folded four times, and squeeze.

Or you can blend the cottage cheese using a kitchen robot, it is time-saving and the results are perfect for the dough. 

Take a large bowl and add the blended cottage cheese in it. Add sugar and a few drops of vanilla extract. If you don’t have that, you can use vanilla sugar. Then add a pinch of salt and mix everything well.

Beat the eggs with a whisk or a hand blender. Add the egg to the cottage cheese and mix using a spatula or fork.

Pour all-purpose flour into the composition. Stir with a spatula until a dough of uniform smooth consistency is formed. Let the dough rest for about 10 minutes. For the dough to be more modelable and for it not to stick to the fingers, you may place it in the fridge for about 10 minutes.

Take a large frying pan with a diameter of at least 9 inches and heat it up. Add a piece of butter and let it melt. Add the cheesecake rolls in it and fry for about 2 minutes on each side until golden brown. Next, cover the pan with a lid and keep on low heat for 3 additional minutes to make sure the heat penetrates the heart of the cheesecakes as well. When done, take them out and place them on a paper towel so that the excess grease is absorbed. Repeat the procedure until you have fried all of the cottage cheese pancakes.
