Simple but particularly tasty, arugula and cherry tomato salad is ready in just 5 minutes. Only a few basic ingredients are combined for a special result. The salad balances between the crunchiness of the arugula leaves, the savory-sweetness of the cherry tomatoes and the flavored olive oil.

The salad with arugula and cherry tomatoes is one of the most prepared dishes in the summer. Not only because it is a quick recipe but also because it is fresh, it doesn’t imply cooking and is prepared in only a few minutes. If you want, you can add tuna or any other protein you like most and transform it into a main dish.

What is arugula good for?

This plant has been cultivated for centuries on the shores of the Mediterranean. It has been used for culinary and medical purposes. Arugula can be cultivated in the pot and grown on the balcony, as it is not a pretentious plant. It just needs some sun and water. This way you have it at the distance of your hand, always available to be used for plenty of tasty recipes.

Arugula is a very valuable plant. 100 g of arugula produce about 25 kcal to our body. Of which 52.4% are carbohydrates, 25.3% proteins, and 22.2% fats. It is a low-fat food, therefore, it is perfect to be introduced in the diet, especially for those who try to lose weight. 

Among lots of benefits, I would like to point out the ones I find good to know. 

  • Arugula is rich in calcium and vitamin C. It is considered a valid remedy for stress due to its beneficial calming properties. 
  • The arugula also has diuretic properties, which makes it perfect for those who want to eliminate toxins from the body.
  • Herbal medicine recognizes the flatulence relieving properties of arugula. That means it favors the expulsion of intestinal gas and digestive properties.  This plant has the ability to stimulate the production of gastric juices. 
  • Also, arugula extract is considered to be very effective in preventing diabetes and improving the response to insulin.

Ingredients for arugula & tomatoes salad

5 cherry tomatoes or Piccadilly

3 tomatoes

100 g of fresh arugula

50 g flakes of parmesan (optional)

1 red onion

2 tbsp extra virgin olive oil

Salt

How to wash arugula

Washing the arugula is certainly not a very complex procedure but it must be done. Like with any other vegetable, it is essential to make sure that the leaves have been well washed because you will eat them raw. You can buy the arugula already washed, however, I do not recommend it. Pre-washed vegetables may not be fresh or ruined as they are not dried well. I always prefer to buy fresh arugula and then spend a few more minutes to wash it thoroughly. After all, washing the arugula is certainly not complicated and will allow you to sweep away soil, germs, and bacteria.

When cleaning the arugula, select and discard yellowish or softened leaves. At this point, put all the leaves in a container full of water and leave to soak for one minute. Then drain the water and proceed by rinsing the arugula leaves under running water. Repeat the procedure from the beginning in case the grass is not perfectly clean. When done, dry the leaves using a clean kitchen towel or a salad spinner. Be gentle, do not crush the leaves. You will love this aspect of the salad.

How to prepare arugula & tomatoes salad

To prepare the salad with arugula and cherry tomatoes, just give it a few minutes. Thoroughly wash the cherry tomatoes and the tomatoes in cold water. Cut the cherries into 4 parts while the tomatoes in 8 parts. Peel and slice the red onion. Wash the arugula and pat it dry with a kitchen towel. Carefully dry the arugula, so it can be served crispy.

Take a large bowl and put in the clean arugula leaves. Add on the cherry tomatoes. Garnish with a dash of oil, a few drops of balsamic vinegar and a pinch of salt, then serve the salad. Add the salt and oil according to your tastes. As easy and simple as it sounds, here you have the summer cherry tomato salad ready to be served. Perhaps, you may have it served with a main meat dish such as roast turkey or chicken wings.

Dressing for arugula & tomatoes salad

For a more flavorful seasoning, you can prepare a mix of oil, balsamic vinegar, lemon, and salt. Then add a few tablespoons of grated parmesan. Pour the aromatic seasoning over the arugula and cherry tomatoes and serve with pleasure!
