Refreshing and Creamy Mini Lime Cheesecake

One of my crowd-pleaser desserts is the irresistible and refreshing Lime Cheesecake. No meal will be complete without this revitalizing and easy lime cheesecake that is finger-lingering. 

I adore desserts. This is my weakness and my guilty pleasure at the same time. I adore eating, but nothing beats a piece of a mouthwatering cheesecake with lime zest and juice. This kind of dessert completes the evening on a delicious note. I have tried many kinds of cheesecakes, all of them are truly tasty and divine. However, this lime dessert is one of my favorites as it is so refreshing after a copious and hearty dinner. It will never be too much, on the contrary, it is as if it awakes your feelings and your state. I simply adore refreshing and revitalizing sweeties to happily and nicely end my day. 

I have tried to cook different types of cheesecake at home, my family simply adores cheesecakes, you can check my classic recipe here. However, the citrusy taste nicely mixed with sweet cream is as if the perfect balance a dessert needs to be deliciously finished. The intense richness it has paired with refreshing topping is more than a sweet indulgence, it is the luxury jewelry among the desserts.

This is the best and the most delicious lime cheesecake recipe to try and endeavor. Its fresh citrusy flavor will entice you to instantly try it. But keep in mind that when you take it off the oven it should settle some minutes, even cooled, before eating. You will better feel the taste and the freshness of the cheesecake if you try it cooled down with a nice cup of coffee or tea. 

Definitely, this is my pleasant weakness and my best recipe to join with you.

How to make lime cheesecake?

For me, these mini lime cheesecakes are embodied to perfection. I love cheesecake and I love limes and it is possible that I am subjective, but I invite you to try it and tell me what you think. These cuties are sweet-sour, creamy, velvety, aromatic and tasty. They have an ordinary base made of graham biscuits and cheese cream feeling flavored with an explosion of limes. 

Cheesecake-lime-ingredients

When cooking cheesecakes always start with the crust. Melt 4 tbsp of the unsalted butter. Meanwhile, chop graham cookies in the kitchen robot. In a bowl mix these ingredients together to obtain a homogeneous composition. 

Preheat the oven to 350 °F(180°C). Baking mini cheesecakes I have used a muffin pan. Line it with muffin liners. Add about one full tablespoon of composition of the crust in each muffin liner and uniformize it with your fingers. Press firmly with the back of the spoon to obtain a well-shaped crust. Bake in the preheated oven for about 7-10 minutes, until the crust becomes slightly golden and crispy. Then remove from the oven and set aside to cool!

Reduce the temperature in the oven to 300 °F (170 °C).

Meanwhile, using a hand mixer beat the 20 ounces of cream cheese with ⅛ of cream until you obtain a smooth composition. Now, mixing at low speed add ½ cup of sugar and 1 tsp of vanilla extract. Continue beating by adding 2 eggs and 2 yolks at room temperature. At the end, add 2 tsp of lime zest and ¼ cup of lime juice and beat until all the ingredients have been well incorporated.

Now, fill the molds until the paper ends. Baking mini cheesecake it is not necessary to use a water bath, so bake them in a preheated oven for about 20 minutes. Remove cheesecakes from the oven and leave them to cool completely for about 30-45 minutes. Before serving try to resist and leave cheesecakes to chill for at least 3 hours.

How long do you cook lime cheesecake?

When the crust is almost baked about 10-15 minutes and you add the filling bake no more than 20 more minutes. The fresh creamy feeling is almost delicious to be eaten, but because it contains eggs it should be baked some minutes until it raises and has a nice aspect. 

How to store lime cheesecake?

This decadent and great lime cheesecake can be prepared in advance. Or if you have some leftovers you can easily store them in the fridge. Easily put the remaining cheesecake in an airtight container and store some 2-3 days.

Also, you can make this lime cheesecake a day before serving it. Just keep cool in the fridge and serve before the guests arrive. This best dessert is served cooled so it is okay if you make it in advance.  

Tips:

  • You can experience the topping by mixing some lemon with lime juice. I simply adore the lime juice’s aroma and taste, but some lemon zest will not spoil the dessert. Also keep in mind that the more lime you add, the more refreshing it will be. As being baked it tends to mild the lime taste, and because of this, I try to use 2 and sometimes 3 lime zest and juices. 
  • A good rule to know! All the ingredients should be at room temperature when you blend them together to obtain a smooth and nice texture. 
  • Easily use a kitchen robot to chop the graham cookies to make the crumbs more easy to use. 
  • When the lime cheesecake is cooked, leave about 30-45 minutes to cool down. Do not cut it until it is chilled and settled down. Top some whipped cream and serve with some lemon zest.

Ingredients
  

Cheesecake crust:
