Why is pasta such a beloved and highly appreciated dish all over the world? I think I found the answer to that. Pasta dishes are super easy to prepare (as a general rule), pasta can be found in numerous shapes and sizes and you can literally add anything to it and it is already delicious.

Now let’s take the pasta dish to another level and cook it in an Instant Pot. Feta & tomato pasta cooked in an instant pot is what I call crazy delicious and insanely easy to prepare.  I fell in love with the baked version of this pasta dish, but damn it, it is sooo hot already during these summer evenings, I don’t want to increase the temperature even more with a blistering oven. Therefore, my kitchen bestie Instant Pot will save the situation, again. I can enjoy flavorsome pasta in no time with minimum effort and maximum satisfaction.

What pasta to use for the feta pasta recipe?

The great part of this recipe is that you can basically use any type of pasta because the taste will not be changed whatsoever. Nonetheless, I would recommend using a short type of pasta such as rigatoni, penne, or fusilli. There’s a very logical explanation for that. Short pasta will capture the sauce inside its nooks and crannies and will easily stir in the delicious creamy sauce. Things that cannot happen with long pasta such as spaghetti or linguine.

What are the best tomatoes for the feta pasta?

I am a big fan of tomatoes, be it the cherry, plum, Roma, persimmon, or Cherokee purple, they’re all delicious, especially in summer. For this particular feta pasta recipe, I opted for the cherry tomatoes because of their sweetness, tiny seeds, and the possibility to cook them whole; there is no need to cut them into smaller pieces. Therefore, I would recommend using cherry tomatoes because of their sweet taste and less effort in cooking.

If you have another kind of tomatoes available, never mind my advice, use whatever you have available, just make sure they’re ripe and fresh. There’s no need to emphasize the importance of fresh ingredients when aiming for great dishes.

How to cook feta pasta in Instant Pot?

Easy, that is the first word that comes into my mind when thinking about how to cook feta pasta in an instant pot. Start the cooking process by turning on the instant pot and rinsing the cherry tomatoes. While the pot is preheating, peel and slice some cloves of garlic and clean the cherry tomatoes. Pour in 2-3 tablespoons of olive oil, add in the slices of garlic and add the cherries. Don’t forget to use a paper towel to absorb the excess water from the tomatoes prior to adding them to the hot pot.

Roast the tomatoes for a couple of minutes then add the pasta of your choice. Mix well then pour in broth or simple water as much as for the liquid to be at the same level as the pasta. Top it with one feta block and sprinkle some salt and oregano or thyme. Seal the lead, set the “sautee” program for 12 minutes, and let the magic happen.

As you can see it is indeed as simple as everyone says it is. Moreover, it is indeed as delicious as they scream about it.
