Any kind of broth, be it pork, chicken, or beef, will make any dishes really tasty and delicious. Today we have commercial broth available in any stores, but the one made at home with some fresh veggies and qualitative meat and bones is much more appreciated and delicious. The homemade broth has a more pronounced aroma, fatty texture, and is full of vitamins and minerals. 

The broth is a concentrated soup obtained by boiling meat and bones for a long time. Besides the taste that it adds to dishes (sauces, risottos, soups,), bone broth is very healthy. 

There is no limit for the kind of bones&meat that can be used for broth. Make it from beef, pork, duck, chicken, lamb, or, why not, combinations. One more thing that is no less important is the quality of ingredients. Try to use meat and bones from animals that have been raised healthy, organic. The right place to purchase meat is the local butcher that you already trust or a local farmer.

This recipe is usually made out of nothing – trow in your Instant Pot, meat with bones and vegetables, and left them for 2-3 hours. Sometimes if I am not in a hurry I leave it even for more hours.

What are the benefits of bone broth?

It’s not just a wise story that you should drink nutritious broth when you are sick. The bone broth contains many nutrients that nourish your body. By cooking at low temperatures for many hours, the cartilage of bones breaks down in gelatin. Gelatin plays a very important role in maintaining the health of the small intestine. And we all know that the small intestine is responsible for our immunity. Gelatin and collagen also help maintain healthy skin, hair, and nails.

Again through the slow cooking method, the minerals in the bones are extracted, so we will also enjoy the benefits of the minerals. Homemade broth is rich in calcium, magnesium, phosphorus, and other minerals, that easily absorbed in our body!

The difference between Stock and Broth?

Although broth and stock are often used interchangeably, there is a difference between these two. The broth is usually made from meat with a few bones thrown in, while the stock is usually made up of bones with less meat and needs a long period of time to prepare. Anyway, you can easily substitute one for the other within recipes.

Do not through away any kitchen leftovers – bones, poultry skin, poultry carcasses, even pieces of vegetables that you normally throw away. All this stuff that you usually throw away can easily go into your broth. I use to store leftovers in the freezer and then transform them in hearty and flavorful broth or stock.

Basically, there are several types of broths, depending on the method of preparation and the type of meat used. It can be brown or lighter in color. For today I choose to prepare flavorful Pork Broth from a good piece of pork shoulder with bone. I like to cook this piece of meat, as it is not too fatty, has the right bone for broth, and enough meat that can be easily then used for shredding. 

Broth can be prepared either old fashioned on the stove or in a pressure cooker. I choose the second option as it considerably saves me time. Homemade broth is better than store-bought broth as you know for sure what goes into it.

So, clean the meat (with bones) of impurities if needed. Then place it in a pot and cover with cold water. Let it soaks overnight or for 10-12 hours. Drain the water and transfer meat in Instant pot. Now if you want brown broth it is necessary to brown the meat and bones before boiling. If you have no preferences just skip this step. 

Pork brothAdd to the pot cleaned and halved carrot and celery root. Also, send some big onions, bay leaves, and peppercorns. If you desire more flavor add fresh herbs and spices such as rosemary, thyme, coriander. Now add water to cover the meat&bones and vegetables in the pot. Season with salt to taste. Close the lid of your Instant Pot. Set vent valve to Sealing. Press the Manual program and adjust the time to 120 minutes. When the elapsed time, allow the pressure to release naturally – it will take about 15-30 minutes. 

Open the lid and strain the carefully bursting with flavors broth.  

How to store Pork Broth?

A qualitative homemade broth will usually have a layer of fat on the top. I will recommend you not to remove it, as it has its role in dishes. Anyway, if you still want to throw it away, take a paper towel and gently absorb the fat. Once you will try you will see how easy it is removing from the top. Another method is to wait until the broth is cooled completely. The fat will gelatinize, so you will discard it easily wit a spoon.

Pork brothBroth can be stored in the fridge for up to 5-7 days. Store it portioned in jars or airtight container. I also like to freeze homemade broth as you can store it longer. Portion it in silicone molds, ice cube trays, or jars with lid.
