Why cook Veal Stew in Instant Pot? 

This instant pot recipe is going to be perfect even for those who are not stew fans. How do I know that? I am not a really huge fan of stew, however, I definitely make an exception for this incredibly delicious veal stew. 

The cook time alone for this stew is approximately 1 hour, this is the instant pot “stew program”. In the end, the total time including preparation is approximately 90 minutes. Even so, that’s a really short time for a stew, as I guess, is a known fact that it could take much more if cooked traditionally on the stove. 

The Veal Stew made in Instant Pot offers a delicious flavor gravy composed of meat, vegetables, and lots of spices. The best part of it that it gets even more delicious the second day or even more. The veal stew made in Moroccan style is extremely healthy and tasty which should be served in a bowl. The veal stew, like most others, is an amazing treat when eaten with fresh or crusty bread by hands.  Although adding bread isn’t healthy anymore, it is one of those things that are worth the risk.

You could use a lot of different vegetables at your own taste such as fennel, onions, garlic, potatoes, carrots, tomatoes makes it all super tasty. However, make sure to know that soft vegetables like for example zucchini might make your stew become too mushy.

This is the reason why the vegetables vary quite a lot, you can leave out those that you don’t love, or you could add more. Nonetheless, adding too little vegetables won’t make your veal stew as tasty so don’t be stingy in adding more. But on the other hand, consider the amount of room in your instant pot to make sure that everything is going to fit well. 

What Meat to Use for Instant Pot Stew? 

Instant pot meat stews are perfect with any meat. Choose whatever meat you like more, just make sure it is with bone.  The bone will add extra flavor upon cooking and you will definitely feel the difference in taste only after trying it. As much as you can see I chose the veal meat because it is tender, tasty and not very fat. Obviously, make sure the meat you are going to cook is fresh.

Ingredients for the Veal Stew

  • 2 carrots cut in big chunks 
  • 4 big potatoes 
  • 1 kg veal meat with bone (lamb meat could be used)
  • 2 onions sliced
  • 2 tomatoes (or 4-5 cherry tomatoes) cut in cubes
  • 1 handful fresh parsley
  • 300 ml vegetable stock 
  • 150 g green peas (fresh or frozen)
  • 1 teaspoon of Cumin
  • 1 teaspoon of Turmeric
  • 2 bay leaves
  • 1 teaspoon of coriander
  • 1 teaspoon of paprika
  • 5 garlic cloves minced
  • 3-4 tablespoons of oil
  • 1 tablespoon of freshly grated ginger
  • Salt to taste
  • Pepper to taste

How to cook the Maroccan Style Instant Pot Veal Stew?

In order to prepare the best Moroccan style veal stew, start browning the veal for about 5 minutes on both sides until lightly golden. Take the meat out and add onions and let it brown for about 5 more minutes. Then add the grated ginger and onion and let everything blend for another 2 minutes. Then, add the tomatoes and all the spices. This way, you give a great aroma to your stew recipe. Top everything with the browned veal and cover with vegetable broth. Simple water will still offer good taste. In the end, add the green peas, which do not even need to be prepared. It is enough for them to just be added in the hot liquid.  Before serving, chop the parsley and sprinkle over your stew.

Be sure that this amazing Moroccan style veal stew will make your whole family happy because it is super tasty and extremely healthy. This is something usual in Morocco, yet, it is something that you may have not tried so far. 

Here are the instructions:

  • Prepare your veal. Add salt and pepper and then toss until it is going to be lightly coated. 
  • Sautee your veal by adding it to the instant pot. First, heat 1 tablespoon of oil and then add the veal that was already cut into cubes. Sautee it on all sides until it becomes brown (usually about 5 minutes). Put it on a plate and repeat this if you have veal left (usually that’s done in 2 even halves). 
  • Sautee your aromatics. Add a tablespoon of oil and then add onions already cut that should be prepared for a few minutes. Then add the grated garlic and ginger. Let it simmer for 1 minute. 
  • Make your stew and cook. Add and mix together the carrots, potatoes, tomatoes, and the pre-browned veal with all the spices including one teaspoon of salt and pepper. Pour 2 cups of vegetable broth in the pot. Close the instant pot lid and leave it on the “stew” regime for 1 hour.
  • Final step – finish stew and serve. Taste the stew and adjust the taste according to your preferences. Serve your stew in bowls. Usually, fresh bread makes a great companion upon serving the stew. 

You can prepare the veal ahead. The stew can be made ahead and kept in the fridge for the next 4-5 days.  Regardless, when preparing to eat, just warm your dish in the pot again.

  • Make your stew and cook. Add and mix together the carrots, potatoes, tomatoes, and all the spices including one teaspoon of salt and pepper. Top with the coated veal meat. Pour the vegetable stock and close the instant pot lid. Set on the "stew" regime for 1 hour with lid closed.
  • Final step. Taste the stew and adjust the taste according to your preferences. Serve your stew in bowls. Usually, fresh bread makes a great companion upon serving the stew.
