My daughter is fond of these great sausage rolls. She sees fun rolling them up and topping with sea salt and some herbs. Many times when I am in a hurry, I use store-bought puff pastry. It saves a lot of time and effort. However, when I want to nicely surprise my whole family I try to make the best homemade dough. These best appetizers are full of flavorful sausage filling carefully wrapped in puff pastry. Sometimes, I add some slices of parmesan next to the sausage as it makes them more lingering.      

This is our family-favorite recipe I have owed from my grandma. I am not too perfect at wrapping ideally, but trust me they have one of the best tastes. These sausage rolls will make a nice appearance on your table or weekend getaway. Also, they are yummy appetizers tasting great even cold, and great snacks for picnics or Sunday potlucks. This dish has become one of our quintessential side dishes when we party or go out with friends. My mom uses to make homemade sausages mixing pork and beef meat, however, I always try to buy the best market-sausages.

How to make sausage rolls?

Well, when the dough is ready to be used I pour some flour on the working surface and cut it in 4 medium pieces. Take one 1 piece of dough and start stretching it finely with the rolling pin.

I take my sausages, in some of the rolls I add finely sliced mozzarella for a better taste. I cut the dough 10mm horizontally. Lay a sheet of pastry on the baking tray, while the oven is already preheated at 180C. 

Meanwhile, I roll up the sausage into the dough shapes and brush some water on the opposite side and tightly roll up to avoid the burning cheese. I place the sausage rolls with some space between them and brush the egg wash over each roll. Top some sesame seeds and sea salt for a nice aspect and a crunchy taste. I adore the granulated sea salt over the pastry. I usually bake 2 baking trays for about 25 minutes or until golden and cooked through.

What kind of sausages to use?

I usually buy market-sausages made of both pork and beef. Rarely, I buy smoked sausages with fat. My mum is mixing the meat by herself and makes them 100% homemade sausage rolls. However, it takes time, so for me, the best option is to buy good quality ones. If you want to make mini appetizers, jut cut halves and roll up in smaller dough sheets.

Can you make sausage rolls in advance?

Easily! You can make the dough in advance and freeze it up to several days. When you want to bake the rolls, just take out and leave at room temperature to defrost. When the pastry has defrosted easily roll them up with sausages. Also, you can prepare sausage rolls ahead and freeze them in an airtight ziplock bag. Do not cook them before freezing. Pull out when you want to serve them and bake evenly. It will save you a lot of time. 

 Recipe tips:

  • You can use any kind of sausages you like or minced meat.
  • Also, you can use store-bought puff pastry or a homemade one.
  • Sometimes I garnish the rolls with oregano spices as I like the combination of sea salt, dried oregano, and sausages. 
  • One more great tip I have taught is to avoid opening the oven door while baking. Try to look through the glass and in case you see them burning, only then open it and took off the oven.
  • Serve these best appetizers with ketchup or mustard.

Ingredients

  • 12 sausages
  • 1 kg dough
  • 6 slices mozzarella
  • herbs

Instructions

  • Preheat oven to 350 degrees F (180 degrees C).
  • Spread pizza dough evenly onto a 9x13-inch baking sheet and start rolling up the sausage into the dough shapes. I brush some water on the opposite side and tightly roll up to avoid the burning cheese.
  • Brush the roll with one mixed egg and top some sesame seeds and sea salt.
  • Bake 25-30 minutes or until golden and cooked through.  


  • Serve both cold or warm with some ketchup aside.
