I remember that in my childhood this chocolate salami was the ultimate dessert for me and my sister beside the famous Cherry Pie. I never had the patience to wait for the salami to chill in the refrigerator overnight. But we get the bowl in which this chocolate dessert was prepared and we were satisfied with it, licking all the leftovers. 

Chocolate salami is part of the classic recipes that is extremely easy to prepare and there is no need to use an oven. A tasty and aromatic desert full of surprises: nuts, candied or dehydrated fruits, and chocolate. Involve your children in the making process and it will become their favorite activity.

In most recipes, you will find as main ingredients – the graham cookies. I will tell you a secret, it does not matter what you will grab – graham cookies, sponge cake, or muffin (even leftovers), everything will work for the salami dough. To make this chocolate salami a kind more healthy I replaced a good amount of cookies with finely chopped nuts. It gives even more crunchiness to this recipe. I have found that the more nuts I add, the better it tastes. For today’s recipe, I have used a blend of toasted almonds and hazelnuts. 

I prefer the texture of chocolate salami a bit denser, but it is just a matter of everyone’s taste. If you desire, you can grind the biscuits and nuts even finer, but do not powder them anyway. They must have a little texture so that the salami dough does not look like a paste. I really like to see the white of the cookies and nuts contrasting with the chocolate dough. Anyway, everything remains at your discretion.

Chocolate salamiThe good quality chocolate replaces the cacao perfect. For a creamier texture besides the unsalted butter, I added condensed milk. The last one can be easily substituted with dulce the leche.

Find below the list of ingredients with exact amount and do not be afraid to personalize it according to you cravings:

Graham cookies – 2 cups

Nuts – 1 ½ cup (almond and hazelnut blend)

Dark chocolate – 7 oz or 1 cup of chocolate chips

Unsalted butter – ⅔ cup

Condensed milk – 1 cup. 

How to make Chocolate Salami?

Chocolate salamiThis delicious treat is called salami because it actually resembles real salami sausage especially when it is sliced. For many of you, its name may sound strange but the taste will surely conquer you. The taste of chocolate salami will remind you for sure about chewy Chocolate cookies and Cacao bombs.

Grind 1 cup of nuts in a food processor until you obtain coarse crumbs. Then add 1 ½ cup of cookies and process them together for some seconds. 

In a separate bowl combine chocolate and butter. Melt them over a water bath. Make sure the bowl does not touch the surface of the water at all. Mix constantly until you obtain a homogeneous mixture.

Chocolate salamiTransfer grounded nuts and cookies to a large mixing bowl. Add the chocolate mixture and condensed milk. Combine gently all the ingredients. Coarsely chop ½ cup of nuts and ½ cup of cookies. Add them to the salami batter and mix again.

For note: If the salami batter looks too liquid ( this depends on the butter and chocolate temperature), before shaping send it to chill in the refrigerator for 15-20 minutes.

Once you have a smooth chocolate mixture you can proceed with shaping. For shaping grab a piece of parchment paper or clingfilm. Tip a chocolate mixture on it and firmly roll the dough resembling a salami sausage. Wrap it like candy, securing the ends with an elastic.

Chocolate salamiSend to the refrigerator overnight. During this time all the flavors enhance and the salami gets an even more delicious and aromatic taste. 

Once the chocolate salami hardened you can infuse the tea. Remove the clingfilm or parchment paper and dust it with extra grounded nuts, cacao, or shredded coconut. Slice the chocolate salami into slices and delight yourself.

Tips:
