I like salads that have proteins, veggies, meat, and all these ingredients coated in olive oil with seasoning. Salads are part of my daily routine, so be it morning or evening, salads are my comfort zone. This wasn’t always so; first, I was forced to eat fried eggs with fresh arugula salad in the morning, but now I can’t imagine eating them separately. At an age, you discover many useful things that change your opinion and way of life.
For example, my husband is always into salads. He loves them all, and many at a time. It was a little stressful, but now I can’t eat meat, fish, quiche, or anything without a salad. Today, there are lots of salad recipes, and you can choose the one you like most. Salads add the vibe to a dinner meal and is the fuel that makes our metabolism work better. I know people who don’t like to eat salads, but they haven’t tried the one that has forever conquered their heart. If I have to speak about myself, my favorite salad is the simplest one made of cherry tomatoes, spring onion, and a piece of salted sheep cheese served with a simple, light dressing. This salad reminds me of summer. You can try some of our salad recipes: burrata salad with orange and herbs, asparagus radish salad, beetroot salad, Asian cucumber salad, Chicken Tender Salad and other salads.
However, today I will write about a more fancy salad I usually serve on special occasions or holidays.
To save time, I usually buy a rotisserie chicken and pull the meat with the help of 2 forks. At the rotisserie, they make one of the best succulent, juicy, crispy skin meat that tastes unbelievable. The smell is unbelievable and mouthwatering.
You can also bake the chicken at home a day before cooking or buy one like me. Usually, I use just the chicken breast and cut some crispy and crunchy skin for aroma.
What goes well with chicken salad?
Chicken salad pairs great with many add-ins such as fresh veggies, herbs, with or without croutons, and different kinds of meat. I have used chicken meat, but you can use turkey breast meat or lamb. For example, my husband likes lamb meat very much and wishes I would make him a lamb salad one day. Lamb meat is dietary and healthy, but it is a little frustrating for me to make this meat at home. Probably, once I will try one recipe.

Chicken salad is an easy recipe to make ahead or at the time you want to serve it. Also, you can make this salad for an ordinary evening or as a fancy salad when you throw parties. It has a lovely aspect and can perfectly fit on a party table. It is a hearty, colorful, healthy, and tasty salad with a simple olive oil dressing. Keep it simple and impress with this salad, all your friends.
Take a platter, and pull the chicken meat with the help of two forks. It is an easy process that will help you quickly pull the meat.
Take a large bowl and place the meat. Chop the onion, cherry tomatoes, and basil leaves. Watch the video below:
Mix everything in the bowl, add the croutons, top some grated Parmegiano, add pesto sauce and crushed walnuts, and serve nicely on a platter.
