  • 1 burrata cheese
  • 1 large orange
  • 2 handfuls baby spinach leaves
  • 1 handful parsley
  • 1 small red onion
  • 1/4 cup pistachios

For the dressing

  • 1 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 1 tsp honey
  • 2 tbsp red wine vinegar
  • 1/4 cup kalamata olives pitted, chopped
