  • 1 cup of frozen peas or fresh ones
  • Some thinly sliced fresh radishes
  • Feta cheese
  • Some pine nuts
  • Fresh basil leaves

For the dressing:

  • One fresh clove of garlic
  • 1/2 cup olive oil
  • Some lemon juice
  • Thinly chopped parsley
  • Seasoning

How to make asparagus salad?

Salads are my weakness especially when it comes to seasonal veggies. An easy asparagus salad is quick to make and tastes fabulous. The aromatic herbal dressing makes this salad taste heavenly.

Fresh Asparagus Salad with RadishThis salad can be done in two simple ways: either blanch the asparagus with some boiling water for 1-2 minutes or use them fresh as they are. I have blanched the asparagus for 1 minute to be sure it will be soft, and tender on the inside.

the dressingTake a big plate and start arranging the veggies. Cut halves of the asparagus, thinly chop the radish, blanch the frozen peas for 1-2 minutes, and sprinkle pine nuts.

Top over the dressing and add some basil or mint leaves for freshness. Coat all ingredients in the dressing and enjoy a healthy and colorful plate of delicacy.
