  • Feta cheese
  • Some pine nuts
  • Fresh basil leaves

  • 1/2 cup olive oil
  • Some lemon juice
  • Thinly chopped parsley
  • Seasoning

How to make asparagus salad?

Salads are my weakness especially when it comes to seasonal veggies. An easy asparagus salad is quick to make and tastes fabulous. The aromatic herbal dressing makes this salad taste heavenly.

Fresh Asparagus Salad with Radish This salad can be done in two simple ways: either blanch the asparagus with some boiling water for 1-2 minutes or use them fresh as they are. I have blanched the asparagus for 1 minute to be sure it will be soft, and tender on the inside.

Take a big plate and start arranging the veggies. Cut halves of the asparagus, thinly chop the radish, blanch the frozen peas for 1-2 minutes as well and sprinkle pine nuts. Top over the dressing and add some basil or mint leaves for more freshness. Coat all ingredients in the dressing and enjoy a healthy and colorful plate of delicacy.
