Asparagus salad with radish is all about fresh tastes, healthy bites, colors, and finger-licking dressing that makes this easy and simple salad taste out of this world.
The end of spring is asparagus time and this is why I try to use it in as many recipes as possible. Fresh, crunchy, and healthy asparagus is useful to eat and even more delicious if coated in a fabulous dressing. What I like about this salad is the color that instantly invites you to try it, despite the taste.
I am simply in love with such easy, but summer-like salads that are crunchy, tasty, and healthy. A bowl of healthiness and your day is on the right path.
Fresh asparagus, some peas, fresh and seasonal radish all of these ingredients coated in a fantastic dressing are everything I need on a hot summer day. Summer is all about fresh and cold dishes. Either a cold gazpacho soup, a cold meat salad, or a greenie one, summer is nothing about complicated recipes.

How to make asparagus salad?
Salads are my weakness especially when it comes to seasonal veggies. An easy asparagus salad is quick to make and tastes fabulous. The aromatic herbal dressing makes this salad taste heavenly.
This salad can be done in two simple ways: either blanch the asparagus with some boiling water for 1-2 minutes or use them fresh as they are. I have blanched the asparagus for 1 minute to be sure it will be soft, and tender on the inside.
Take a big plate and start arranging the veggies. Cut halves of the asparagus, thinly chop the radish, blanch the frozen peas for 1-2 minutes as well and sprinkle pine nuts. Top over the dressing and add some basil or mint leaves for more freshness. Coat all ingredients in the dressing and enjoy a healthy and colorful plate of delicacy.
This healthy asparagus salad will pair greatly with a bite of delicious Meatloaf cooked in an air fryer, next to pork chops cooked in an Instant pot, a homemade burger, or any other meat or fish dishes.
