- 1 burrata cheese
- 1 large orange
- 2 handfuls baby spinach leaves
- 1 handful parsley
- 1 small red onion
- 1/4 cup pistachios
For the dressing
- 1 tbsp Dijon mustard
- 2 tbsp olive oil
- 1 tsp honey
- 2 tbsp red wine vinegar
- 1/4 cup kalamata olives pitted, chopped
Dressing
Mix the orange zest, mustard, and a bit of vinegar until it all becomes one
Stir in the rest of the vinegar, olive oil, and honey and mix again. Drop in the olives and the salt.
Salad
Use a sharp knife to finely slice the orange. Remove the pips but do not discard the juice that will accumulate on your cutting board. Add that to the dressing
Finely slice the onion in order to preserve the same geometrical shapes for the salad.
Use a platter or a large serving plate and spread the salad leaves all over it
Evenly top the onion rings and the orange slices. Drizzle half of the dressing, mix with a salad spoon or use your hands
Lay pieces of burrata all over the surface and drizzle the remaining dressing on top
Sprinkle some chopped pistachios
Serve with pleasure
