Is it better to use oil or butter in muffins?

It’s a good question that every housewife has probably stumbled upon. It all depends on what is your purpose. Oil-based muffins tend to grow more than butter-basted ones. Also, cakes made with oil are moister and fluffier and stay tender for longer than cakes made with butter. Butter has its purpose in the bakery. Muffins and cakes made with butter taste better than oil-based ones.

How can I make my muffins moister?

Actually, the answer is below – just use vegetable oil. If the recipe calls for butter and you want your cake moist, substitute a quarter of the butter with vegetable oil. Make sure you do not overmix the batter and bake no longer than 20 minutes.

Can I use Frozen Bananas?

Definitely, you can use frozen bananas. Before adding them to the batter, thaw them completly at room temperature. Take into consideration that frozen bananas tend to release more moisture. So add one more tablespoon of flour or lightly pat dry bananas with a paper towel.

Tips: If you have some overripe bananas – freeze them. Peel and then transfer bananas in a ziploc bag.
