At home, this tomato sauce tastes homey and warm. Here, you can use the best sweet tomatoes you like, adjust spiciness, and make more sauce and freeze it for any time you make some spaghetti or some roasted bell peppers. This simple tomato sauce recipe made in Instant Pot saves you time, but the aroma is divine. It tastes exciting and pleasant. A balanced sweet/sour taste to instantly enjoy.Â
This recipe is super simple as it needs only three ingredients – the most simple and available ingredients you have in your kitchen.Â
Do you need to pour water while making this tomato sauce?
No, because tomatoes have a lot of natural moist. and water will only go wrong here. You don’t want a too liquidy sauce; this is why there is no need in water. Just tomatoes!
Even in the Instant Pot, I didn’t add any water. Here, you can make at your discretion.Â
This sauce will nicely pair with some pasta, with some baked bell peppers, topped on some toasted bread next to some cheese. I adore making this simple sauce at home as it assembles quick and tastes more natural.Â
I like to peel the tomatoes after steaming them for 3 minutes, but it is optional. My mom, for example, never peels the skin, and even so, this sauce tastes mouth-watering and delicious. So it is at your discretion to decide how to make it.Â
This tomato sauce will nicely please you with a simple, but sweet/sourly taste that I have updated with some secrets. Easily add some basil leaves, oregano or thyme leaves to add more aroma and taste. I wanted it traditional and authentic, so this is why I made it simple but delish.
What tomatoes are best for this sauce?
The sweet and ripe tomatoes are the best for this sauce. I adore cherries and try to always add them to many of my dishes. Here you can add any tomatoes you have available in your fridge.Â
For example, San Marzano, Amish Paste, Orange Roma are some best Italian tomatoes, but you can easily use full-size tomatoes that are sweet and watery.Â
How to make tomato sauce in Instant Pot?
Turn on the Instant Pot at sautee program and start sauteing chopped onion until smooth. Add some minced cloves of garlic, as garlic combines with tomatoes more than just perfect! They are one of the best duos. It will take you some 3-5 minutes. Until the onion and the garlic is sauteeing, cut halves the tomatoes.Â
Put tomatoes with the cut side down between onions and close the lid of the Instant Pot. Let them infuse aroma and smoothen for 5 minutes. After 5 minutes, take tomatoes out and peel off the skin. This steaming process helps to peel off the skin easily.
When the skin is peeled, put tomatoes back to the pot and with a spatula gently crush tomatoes, to make it look like a thick sauce, it shouldn’t be too liquid, not too thick. It has to have a medium consistency.
Close the lid and let it sautee up to 15 minutes. Open the lid, and adjust seasoning. I have added Provence herbs, a pinch of cayenne pepper, salt and black pepper. You can add some pepper flakes for spiciness if you have.Â

Some tips: to avoid burnt tomatoes, onion or garlic, I add the seasoning at the end. This way, you will keep the veggies fresh and at their best taste. In case you see that the bottom of the Instant Pot is burning, easily add some water, but not too much. Now enjoy!
