  • Bacon – 6 slices
  • Onion – one large

  • Water – 5 cans ( or broth if desired)

  • Fresh spinach – 2 cups.

How do you make Zuppa Toscana?

Italian sausage, flavorful bacon, soft potatoes, creamy base – all together create an irresistible Zuppa Toscana. You will want to cook it over and over again.

Instant Pot Zuppa Toscana Set your Instant Pot to high “Saute” mode. The soup flavor starts with a few slices of bacon cooked until crisp, then removed before draining. So, after heating, add the bacon. Once crispy, remove the bacon from the pot on a paper-towel-lined plate and set it aside.

Spoon out excess fat, leaving just about 1 ½ tbsp in the pot. Remove the sausage casings and send the meat to the pot. Cook, constantly stirring until the meat is browned and the fat melts. Italian sausage provides a wonderful flavor and adds a nice chewy bite to this soup. Once cooked through, remove the meat from the pot.

Add the onion and garlic and sauté, stirring until vegetables soften a little. It will take you about 3-4 minutes.

Mix a little and close the lid, making sure the valve points to the “Seal” position. When Instant Pot beeps, release the pressure by opening the valve. Carefully open the lid. Add the heavy cream, bacon, and meat – taste, and season with salt and pepper to taste. Heavy cream is the key to a rich, full-bodied broth. Anyway, if you want to lighten your soup a little, you can replace half of the heavy cream with half and half. Close the lid and adjust the time for 5 more minutes. Once done, carefully remove the lid. Turn off the Instant Pot and add the spinach. Stir to combine.

Serve warm with a slice of crispy bread! Dinner is ready in less than an hour. Dive in and enjoy!
