Soft & Airy Cottage Cheese Pancakes
Homemade cottage cheese pancakes - a special dish served for breakfast or as a treat. It is a very simple recipe for fluffy fried cheese pancakes topped with fresh fruits or any favorite jam.

- 16 oz cottage cheese
- 2 eggs
- 5-6 tbsp all-purpose flour
- 2 tbsp sugar
- 1/2 tsp salt
- 1 tsp vanilla extract
- 3 tbsp butter
Blend the cottage cheese using a kitchen robot
Add the sugar, the salt and one teaspoon of vanilla extract.
Crack and add the eggs to the cottage cheese and mix using a spatula or fork
Add all-purpose flour into the composition. Stir until the dough is formed
Sprinkle some flour on the working surface of your kitchen table. Place the cheese dough on that surface and form a 2 inches thick tube using your hands
Now slice it into equal circles of about 0.5 inches thick. Roll each cottage cheese circle and sprinkle some flour on top
Take a large frying pan with a diameter of at least 9 inches and heat it up.
Add one tablespoon of butter and let it melt
Add the cheesecake rolls in it and fry on medium-low heat for about 2 minutes on each side until golden brown
Cover the pan with a lid and keep on low heat for 3 additional minutes
Serve with pleasure with your favorite topping
