The Iconic French Onion Soup is probably one of the epic soups in history. Caramelized onions with a shot of brandy, some cheese, and your French Onion Soup will knock your socks off. 

If you have never tried French onion soup, then follow my steps and dare to make it at home. Feel the authentic French-taste right at your house with this traditional onion soup.

Onion, well who loves boiled onions?

Of course, if you think about them in this way, you will probably be sceptical about this great-tasting and truly famous French onion soup. Trust me, it is one of the best soups I have tried.

When it comes to a cheesy dish, my heart melts. I discovered a new taste, a new combination of tastes that was fantastic and lingering. Believe me, French people know the price of making delicious and famous dishes. 

It may sound odd and disgusting, but if you make the correct proportions with a good shot of Vermouth and a lot of cheese, you will find that you simply adore onions in recipes.

Why is it called French onion soup?

French Onion Soup dates back to the 18th century and has its origin in France when it was first discovered. Since then it became worldwide popular and one of the restaurant’s favourite soups. It is basically made of caramelized onions, beef or chicken broth, white wine, a shot of brandy, some bay thyme leaves, and a crusty baguette slice coated in lots of cheese topped over the soup. It is amazing and incredibly delicious. 

This soup is soul-soothing with a rich/sweet taste.

What kind of onions to use for French onion soup?

Most famous and popular are the large yellow onions. However, you can use red, sweet, shallots, or even mixing onions for a better combination. I have used large yellow onions that are also sweet and deep in flavour.

What alcohol is in French onion soup?

A glass of dry white wine with a shot of good brandy is the best combination for the best tasting French onion soup. Skip or substitute any of these ingredients. I have used both, but you can only use wine or cognac. 

Wine, in this recipe, is used to deglaze the pan and adds depth of flavour. Easily use Chardonnay, Pinot Grigio, and even red ones like Merlot or Pinot Noir.

What do you eat with onion soup?

French onion soup is great to be savoured simply as it is. Easily add more cheese if you want it ooy-cheesy. 

But, you can serve this onion soup with noodles, roasted veggies or mushrooms, baked salmon, or green leaves such as arugula or spinach. 

What can I use instead of Gruyere cheese in French onion soup?

Gruyere cheese is a famous Swiss cheese that is used in lots of french recipes. However, in case you didn’t find it anywhere, easily replace it with other cheeses. For example, Beaufort or Compe are smooth Frech cheese that can replace Gruyere for broiling or even baking. Other cheeses you may add are the famous Parmesan, Mozzarella, Maasdam, Emmentaler or others soft and smooth cheeses. 

How to make french onion soup?

Making French soup at home is as if you bring a French air to your house. An old-fashioned and epic soup that is still so authentic and famous nowadays. Hope you will enjoy my version and leave comments.

Instant Pot French Onion Soup Ingredients

The ingredients:

6 large yellow onions

6-8 cloves of garlic optional

8 cups of beef broth

2 tbsp of butter

1 tbsp sugar

1 glass of dry white wine

1 shot of brandy

Fresh baguette 

Gauda and Parmesan cheese

I have made this traditional French Onion Soup in my Instant Pot as it is easier, less mess and smell.

Once your ingredients are ready to be used, let’s start making the soup.

Instant Pot French Onion Soup

  1.  Caramelization process starts first. Turn on the Instant Pot at low heat and pour some olive oil. Add the chopped onions and push the saute program. Stir often to avoid stickiness. Sautee about 15 minutes.
  2. Add butter and salt, raise the heat at high and let the onions brown. Stir frequently until they will darken and get soft. It takes another 15 minutes.
  3. Add the minced garlic and the wine. Deglaze the pot with a shot of brandy. Scrape up the browned bits on the bottom of the pot with a spatula, and deglaze constantly.
  4. Pour the beef stock and add the seasoning. Bring to a simmer and cover the Instant Pot and lower the heat to keep a low simmer. Cook 30 minutes more. 

Instant Pot French Onion SoupMeanwhile, take a baking tray and lay down parchment paper. Cut slices the fresh baguette, top a lot of cheese and bake 3-5 minutes or until the cheese melts. Bake in the preheated oven at 450F. 

      5. The soup is ready so take a bowl and transfer some amount from the Instant Pot. Top one cheesy toast onto the soup and serve immediately.

How to store French onion soup?

If you have some leftovers, easily store the cooled down soup until the next day for lunch or dinner. You can keep this soup up to 3 days.
