  • 2 cans white beans. You can use black beans as well, or mix them.
  • 1 celery stalk
  • 1 carrot
  • 1 onion
  • 1 bell pepper
  • 3 tbsp olive oil
  • 1 bay leaf
  • 2 cups broth or water
  • Some spinach leaves
  • Seasoning

How to make the instant pot bean soup?

Start by preparing the legumes, peel, and wash accordingly. Turn on the instant pot, select the “saute” regime. While it is preheating, you take care of the vegetables, dice them all evenly. 

For that, you will need a sharp knife and a cutting board. 

Pour a few tablespoons of olive oil into the instant pot and let it heat up. Put in the diced onion to brown first, in about 1 minute add the diced carrots and let it saute together for about 2 minutes. Later on, add the diced bell pepper. One minute later add the canned beans and the spices. Smoked paprika and granulated garlic make a good flavor anchoring. Don’t forget about the salt and pepper. Finally, pour in the broth or hot water and add the baby spinach leaves. Close the lid of the instant pot, bring it to a boil, check for seasoning, and call it done. Press the “cancel” button and release the steam.

Ingredients
  

  • 1 can beans white
  • 1 onion
  • 1 carrot
  • 1 stalk celery
  • 1 bell pepper
  • 1 handful baby spinach
  • 3 tbsp olive oil
  • 1 tsp granulated garlic
  • 1 tsp smoked paprika
  • 1 1/2 tsp salt
  • 2 cups vegetable broth or water

Instructions
 

  • Prepare the legumes, wash, and peel
  • Set the "saute" program on the instant pot. Wait till preheated
  • In the meantime dice all the vegetables evenly
  • Add 3 tbsp of olive oil to the pot
  • Add the onion, then the carrot, then the celery. Saute for about 5 minutes
  • Add the beans, season, and add the broth or water. Sprinkle with baby spinach on top. the Close lid, bring to a boil (about 3-4 minutes) then press "cancel"
  • Release steam
  • Use a ladle to pour the soup into a bowl. Sink some croutons and serve with pleasure
