- 1 handful baby spinach
- 3 tbsp olive oil
- 1 tsp granulated garlic
- 1 tsp smoked paprika
- 1 1/2 tsp salt
- 2 cups vegetable broth or water
Instructions
- Prepare the legumes, wash, and peel
- Set the "saute" program on the instant pot. Wait till preheated
- In the meantime dice all the vegetables evenly
- Add 3 tbsp of olive oil to the pot
- Add the onion, then the carrot, then the celery. Saute for about 5 minutes
- Add the beans, season, and add the broth or water. Sprinkle with baby spinach on top. the Close lid, bring to a boil (about 3-4 minutes) then press "cancel"
- Release steam
- Use a ladle to pour the soup into a bowl. Sink some croutons and serve with pleasure
