My family adores this versatile mushroom gravy, and I frequently substitute it with meat to make it vegan. Because mushrooms are so satisfying and hearty, I try to make a light and easy garniture. Sometimes it may be mashed potatoes, hard wheat rice, or even some grilled meats steak. How to make mushroom gravy?
For the best mushroom gravy, you will need to buy the mushrooms you like. Usually, I buy white button mushrooms, but you can easily choose any other kinds.
Firstly you have to properly clean from dirt your mushrooms, as I rarely wash them in order not to absorb too much water and to avoid too much liquid in the gravy. For this creamy gravy, you need 1 pack of mushrooms, 1 cup of milk, 2 tbsp of flour, 2 tbsp of butter, olive oil, a pinch of salt and pepper.
Heat in a large skillet 2 tbsp of olive oil. In 1 minute when the oil has heated add mushrooms and saute until soft and golden (about 5-7 minutes). When the mushrooms are ready, take off the skillet and place them on a plate. Add the butter in the same skillet where you have fried mushrooms with 2 tbsp of flour. Whisk well until the flour has melted and roux into a golden brown (1-3 minutes no more). Pour the milk into the mixture and stir well until thickened. Return mushrooms back to the skillet, season with some salt and pepper and bring to simmer. Simmer about 5 more minutes, and keep in mind that when you take off the heat your gravy, it will slightly thicken as it cools down.

How to make cream of mushroom gravy?
The creamy texture is easy and quick to prepare. I am usually afraid of this process but making it more frequently you get used making it professional. Mix the butter with flavor and whisk well until you have a pale yellow consistency. Whisk about 1-2 minutes until you feel the texture is pureed. Then add the milk and stir until it thickens. This process is similar to when you make the bechamel sauce. The first time is more difficult, but with the 4th time, you will make it as a chef :). When the mushroom gravy has cooled down you can freely add it to a container and freeze it up for 1-2 days. Microwave it, or reheat in a skillet and serve it topped on any of the garnitures.
Mushroom Gravy Tips:
- Saute mushrooms in butter for a more creamy and aromatic aroma.
- You can saute mushrooms in beef drippings or bacon grease for a more flavorful aroma and consistency.
- You can substitute the flour with cornstarch for thickening the gravy. I usually prefer flour.
- You can pour 1glass of red wine into the sauce or some drops of balsamic vinegar.

Creamy Mushroom Gravy
- Large cutting board
- parchment paper
- rubber spatula
- 1 pack mushrooms
- 1 cup milk
- 2 tbsp flour
- 2 tbsp butter
- 2 tbsp olive oil
- 1 pinch salt
- 1 pinch pepper
- Clean, or wash the mushrooms and finely slice them.
- Heat the skillet and fry the mushrooms in some olive oil.
- Saute until soft and golden brown (about 7-10 minutes).
- Take off the mushrooms when they are ready and place on a plate.
- In the same skillet: mix butter with flour about 1-2 minutes until the consistency looks like a puree.
- Pour the milk and into the mixture and stir well until thickened.
- Return mushrooms back to the skillet and simmer 5-7 minutes more.
- Serve the mushroom gravy topped on any garniture.
- Garnish with some greenies or parmesan.
