How to make Air Fryer Eggplant Parmesan?

This air fryer eggplant parmesan is fried with minimal oil and cooked to crispy and crunchy perfection in minutes. All thanks to this magical kitchen appliance –  air fryer! This dish is savory and eaten hot right out of the air fryer. The steps are easy and pretty simple.

Air Fryer Eggplant ParmesanTrim and slice the eggplant in ¼-inch thick. Score each slice with the tip of a sharp knife to create a diamond crosshatch pattern.

Preheat the air fryer to 370 °F.

Grease with extra virgin olive oil on both sides of each slice of aubergine. Season with salt and pepper.  Line the air fryer basket with parchment paper. Arrange eggplant rounds in one layer in the air fryer basket. Cook for 4-5 minutes and then flip and air fryer for another 4 minutes to ensure even cooking.

Once eggplant slices are cooked, top them with tomato and onion mixture. Using your hands, gently break up the mozzarella balls and shred some parmesan on the top. Air fry for three more minutes, letting the cheese melt.

  • 1 red onion small
  • 2 mozzarella balls medium size
  • 1/4 cup grated parmesan
