As spring is officially here, fresh salads with fresh veggies are always welcomed on the table. Also, potlucks or barbeques won’t be complete without some healthy and fresh salads. 

Creamy Cucumber Radish Salad For today, I have decided to make an easy, but tasty cucumber radish salad coated in sour cream and lots of dills. I adore dill with cream – it is such a nice and savoury balance that I usually make it in summer. Yoghurt is also an option here, but when I make such salads I seek for more intense consistency. I like sour cream’s intense taste that perfectly pairs with fresh and crunchy veggies.

It is a very easy salad to make and we all love that crispy creamy texture that instantly reminds of summer. In summer, I try to often make this cucumber radish salad recipe served next to some baked new potatoes, meat, or fried fish.

What I love most about this best salad is that you can easily serve it as light and late dinner, as an appetizer, or side dish. Its creamy texture will satisfy your hungry feelings on a low-calorie note. 

Can you eat raw radish?

Yes, you can and should! Fresh veggies are loaded with vitamins and healthy nutrients so it is very important to eat as much as possible fresh-seasonal vegetables. Radishes have a nice and intense fuchsia colour – they are so inviting that you can’t pass near them and not to notice and try some. Radishes are great in salads, but they taste great even cooked. For salads, they will be thinly sliced, while for cooking they can be easily used wholes with roots.

What are the benefits of eating radishes?

As I mentioned above, eating fresh-seasonal radishes is a healthy habit. This superfood veggie is high in nutrients, has lots of vitamins, and is a great antioxidant. It also contains zinc, magnesium, iron, calcium, and lots of water. Radish is beneficial to our immune system and is low in calories.  

It is important to choose nice-looking, fresh, and tender radishes even in winter! 

How to make cucumber radish salad?

Creamy Cucumber Radish Salad Cucumber radish salad with a creamy dressing is done in minutes. This delicious and healthy salad offers the taste of summer, even in winter. We love such creamy and crunchy salads that pair so well with anything. 

The ingredients for the salad varies of the size you want to make it. For today I made it just for 3 of us, in case you are more people just double the ingredients: 

  • 2 medium cucumbers. Two ripe and fresh cucumbers either peel off the skin to avoid the bitter taste or leave it. I left the skin as I have used two fresh and good quality cucumbers. 
  • 1 bunch of radish. Trim the ends and thinly slice.
  • 3-5 spring onions washed and cleaned.
  • 1 bunch of dill finely chopped.
  • Salt and pepper
  • ½ pack of sour cream (i have used 20% fat of sour cream).

Creamy Cucumber Radish Salad After the veggies were washed and wiped with a kitchen towel, the fun and relaxing process starts. Take a wood cutting board and start cutting the veggies. For this salad, I cut round slices to have a nice-looking salad. Take a bowl and combine all veggies. Season with salt and some pepper and pour the sour cream and mix gently to coat all veggies in dressing. For note: pour the dressing just before you are serving it. The longer it sits, the dressing will become too liquid as salt causes both cucumber and radish to release water. So to avoid a soggy salad, pour the dressing just before you will serve it.

Tips:

  • Substitute the fatty sour cream with low-fat one, or plain Greek yoghurt. Cottage cheese can also be an option for this great cucumber radish salad.
  • Add tomatoes, or skip other veggies and replace with some you like.  
  • Add dill as much as possible – this salad tastes even better with more dill and onions.

Ingredients
  

  • 2 cucumbers
  • 1 bunch radish

Instructions
 

  • In a bowl combine all sliced veggies. Season with salt and pepper.
  • Pour the sour cream and gently mix to coat the salad in dressing.
  • Serve immediately.
