Also, I advise you to pick up freestone peaches but at the same time that are still firm when squeezed. Too ripe peaches have more sugar, so they will burn quickly.
How to make Caramelized Peaches with IceCream?
When it comes to grilling and desserts of course my choice will fall on caramelized peaches. Grilling peaches is an extremely simple way to enjoy these delicious and juicy fruits.
For a crunchy topping and beautiful texture, I caramelized some almond nuts. For the recipe, you can see our Candied Walnuts recipe (this one is with butter). Just substitute walnuts with almond or any nuts you prefer.
Also, you can go easier and toast nuts with sugar in a saucepan. Combine ½ cup of almonds and 2 tbsp of granulated sugar in a saucepan over medium-high heat. With a spatula ( wooden or rubber one) toast nuts stirring constantly for about 5-6 minutes. Once the sugar has melted and smelled like caramel pour nuts onto the pice of parchment paper. Then quickly spread out as much as possible. Set aside and let nuts cool completely. For the topping, I usually use almonds crumbs. For this transfer caramelized nuts in the food processor and pulse until the nuts are the desired size.
Now let’s come back to our peaches. Grab 3 peaches wash and dry them with a paper towel. Then cut them in halves and pit them.
Then heat a grill pan, greased with a tablespoon of unsalted butter. When you see the pan hot, sprinkle one teaspoon of brown sugar and add peach halves with the cut-side down. Grill peaches for about 5 minutes until they are tender and the sugar is caramelized. Now add a splash of rum if desired.
When done, transfer to a plate and leave them rest for two minutes. Serve with vanilla ice cream and a generous sprinkle with grind almonds.
