The avocado, radish, and hummus spread sandwich are a vegan snack full of proteins and colors—a hearty and satisfying sandwich to enjoy any time of the day. Â
Sandwiches are my comfort zone. I like to experience different ingredients and to make them look and taste unbelievable. This time I wanted it vegan, with a lot of hummus, avocado, fresh radish, green leaves, and toasted bread—nothing complicated, on the contrary with some bursting flavors and colors. I like sandwiches stuffed with everything, from meat, and fish, to vegetarian or vegan. If done with love and fresh ingredients, they all taste out of this world.Â
Why vegan?
As I have mentioned in some of my previous articles, my family goes meatless some days. This is why vegan dishes are welcomed, and for them to be tasty and inviting, I have to create magic in my kitchen. Hummus with avocado is a win-win, so adding more veggies or greenies will only make a sandwich taste fantastically. Drizzle olive oil on top of it, and enjoy a healthy and satisfying snack—a super-tasty and delicious avocado hummus sandwich to enjoy the whole family.Â
More add-ins:
- Skip hummus and replace it with cashew puree
- Blend avocado and spread it over the bread instead of hummus
- Mushrooms
- Veggies like bell peppers, cucumbers, tomatoes, and red onion
- Fried egg
- Cheese
- Tuna
- Meat
This sandwich is super delicious and hearty, stuffed with fresh veggies for wonderful crunch and colors, while hummus and avocado impart bursting flavors. This dairy-free and gluten-free sandwich is made of healthy grainy bread, fresh veggies, and mixing of nourishing flavors and colors—a unique and delicious snack to make my daughter eat it next to us.Â
Optional, I have toasted my bread in my air fryer for 2-3 minutes to obtain a more crunchy effect and a warm sandwich. Sometimes, I need to serve a warm snack in the morning and avoid cold dishes. Â
 The ingredients:Â
- Four slices of whole-grain bread
- 2 cups hummus
- ½ red onion
- 1 peeled ripe avocado, sliced
- 4-6 radishes, very thinly sliced
- Arugula
- 2 tbsp olive oil
