  1. Break two eggs in a bowl. Separate the two egg yolks and egg whites. Add both to different bowls. 
  2. Add 3 tbsp cold water and one tbsp vegetable oil to two egg yolks. Add 3 tbsp all-purpose flour, 1 tsp salt, and 1 tsp pepper. Mix. 
  3. Whip the egg whites, add them to the egg yolk mixture, and mix. Transfer the egg mixture to a shallow plate.

  4. Put 1 cup of grated Parmesan cheese on a separate plate. 
  5. Wash, clean, and pat dry asparagus spears. Dip each asparagus spear into the egg mixture and the grated Parmesan cheese.

  6. Lay spears in the air fryer basket, greased or sprayed with oil. Cook the spears at 400°F (204.444°C) in the air fryer for 10 minutes.
