Asparagus and Cheese Tart is easy to make and delicious to enjoy. The flaky pastry filled with ricotta cheese and fresh asparagus are sometimes all you need to warm your feelings and delight your tastes.   

I adore asparagus, and because its’ now its season, I adore them even more. 

This easy tart is made of puff pastry, fresh and green asparagus, ricotta cheese, and some greenies. The final result is a crunchy, crispy, soft, and the finest tart that instantly melts into your mouth. The cheesy filling topped with fresh and crunchy asparagus makes it all a nice and balanced composition to simply enjoy even on the next day.

I like to bake cheese with asparagus in the oven as the result is lingering and really delicious. Definitely, served warm when the cheese is melting in your mouth next to the crispy asparagus is much better. But, it tastes really great even the next day. When I bake this kind of easy but tasty tart I try to make more, as we enjoy it on the next day at breakfast. This is a Spring asparagus tart-feeling that I make rather often in my house. I rarely make it in winter, but in Springs I try to make them really often. This is an easy asparagus recipe to make and savour, especially for asparagus lovers. 

What else I love about this great Spring tart is the gorgeous and at the same time rustic aspect. An impressive asparagus cheese tart that tastes insane. If you haven’t yet tried it, I really recommend making it at home with some qualitative ingredients to enjoy the real authentic taste.  

How to make cheese filling?

The ideal filling for the asparagus cheese tart is so versatile that you can easily reinvent your own. I have found recipes suggesting different types of cheese, however, for me, ricotta is one that ideally suits here. The soft, fine, and delish ricotta cheese is one that I simply adore adding in many of my cookings. Also, ricotta has less fat percentage, is light, creamy with a delicate goat flavour. This kind of cheese can suit both salty and sweet pastries.   

But, you can easily use any kind of soft and mild cheese such as: mozzarella, heavy cream, cheddar, or other cheeses you like.

Spring is the mother of the asparagus. This is why I try to cook it in many forms and in different recipes as we really adore eating fresh and healthy asparagus. It is a healthy veggie full of vitamins, nutrients, fibres, and many other health benefits. Asparagus offers a vast variety of antioxidants and is often used in diet menus. 

I like to use it in different recipes such as Asparagus Soup, Asparagus and Eggs Frittatas, or simply baked in the oven and topped with some parmesan. 

How to make asparagus cheese tart?

Asparagus and cheese tart is easy to make and tastes super-delicious. Because I am using an already bought puff pastry, this great asparagus tart is so easy that it almost feels like cheating as it needs not so much time to make it. Three key ingredients and you will have a fabulous looking homemade tart that is not only tasty but healthy as well.

The ingredients:

  • 17 oz (500 g) puff pastry. You can use filo sheets as well. 
  • 14 oz (400 gr or 2 packs) of ricotta cheese. Here you can add any kind of soft and mild cheese you like.
  • 3 eggs.
  • 20-30 fresh and green asparagus. 
  • ½ juice of a freshly squeezed lemon.
  • 1 tbsp olive oil.
  • 1 tsp garlic powder.
  • â…“ paprika flakes.
  • Some fresh and chopped dill and spring onion for a more pronounced taste, but it is optional. I like the great taste of cheese mixed with some dill and fresh spring onions. 

How to make this great asparagus and cheese tart is really easy and you will get quickly convinced of it. 

Preheat the oven at 390F or 200C.

Wash properly the asparagus and trim the ends. Take a bowl and add the asparagus with all the seasoning to coat all the aromas. Set aside until you will prepare other ingredients. 

Take the baking tray and lay some parchment paper to lay down the puff pastry. Press a little the dough into the edges and sides to avoid the cream-egg filling leaking off the pastry. Prick the pastry with a fork so that the dough doesn’t rise too much.

For note: defrost the pastry overnight in the fridge and take it out some hours before you will make the tart.

Take a bowl and add the ricotta cheese, 2 whole eggs, garlic powder, paprika flakes, salt and pepper and mix well until all the ingredients have been incorporated and coated all aromas. 

Start layering: spread the cheese filling over the pastry and start nicely arranging the asparagus topping with some of the remaining cheese. Leave 2 cm of the dough uncovered to obtain a nice-looking tart. Brush the edges with an egg and bake about 20 minutes or until golden to brown. 

Asparagus tartLeave the tart to cool down for some minutes until you will cut and serve it. 

Asparagus and cheese tart tastes best when served warm, however, leftovers can be easily stored for up to 2 days. Just reheat in the oven or microwave and serve warm.

What’s great about this best asparagus and cheese tart is it’s effortless to make the dough for it. Some fresh and qualitative bought puff pastry filled with all the ingredients saves you time to make other meals while it is baking in the oven. Well, it is really optional – nothing beats a homemade perfect dough, but when I am really lazy I like to buy the puff pastry for this tart. 

This warm and homey asparagus cheese tart is always remembering me my sweet cozy mom’s home.

Ingredients
  

  • 17 oz puff pastry thawed
  • 14 oz ricotta cheese
  • 30 fresh green asparagus
  • 3 eggs
  • 1/2 lemon juice
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/3 paprika flakes
  • dill
  • spring onion
  • 1/2 cup parmesan

Instructions
 

  • Preheat the oven at 390F or 200C. Like some parchment paper on a baking tray and set aside.
  • For the cheese filling - take a bowl and add the ricotta cheese, 2 whole eggs, garlic powder, paprika flakes, salt and pepper and mix well until all the ingredients have been incorporated.
  • Lay the puff pastry over the baking tray and press a little the dough into the edges and sides to avoid the cream-egg filling leaking off the pastry. Spread the cream cheese filling over the pastry and start nicely arranging the asparagus topping with some of the remaining cheese.
  • Brush the edges with a beaten egg and bake about 20 minutes or until golden to brown.
  • Remove the tart from the oven and let it cool down for 5-10 minutes before slicing it. Serve immediately.
