Those people who are on a keto diet may find this salad easy, fast, and delicious. Some leftover chicken, fresh veggies, green leaves, avocado, and a simple mayo dressing is everything you need to enjoy a moment of healthiness. Even though I am not on a Keto diet, I have many friends now obsessed with it. Maybe this is the point sometimes I want to try some keto recipes, perhaps I will change my mind and get on a Keto diet asap.
Keto recipes, especially salads, are so versatile that you can easily add any ingredients to your chicken salad and you won’t go wrong. For example; some nuts, walnuts or pine nuts, some bacon will only add flavour and heartiness. I have skipped these ingredients as I thought that the only ingredients I have used are more than enough.Â
I use to make mayo dressing by myself, and as I have mentioned in some of my first articles, it assembles in 4 minutes. Homemade mayo is more healthy as you don’t add rancid cooking oils, you can check my recipe here. However, today I have bought good quality mayo and mixed it with a tbsp of Dijon mustard.Â
You can easily customise the veggies that you want to add. Any low carb veggies will be great for this recipe such as cucumbers, zucchini, celery stalks and others.
This salad recipe is exciting, fabulous, and hearty. It assembles quick and tastes really fantastic. I enjoy such easy to make salads any time of the day. Mayo, especially the homemade mayonnaise, is absolutely perfect on a keto diet. We all know that mayo is high in fats and has no carbs, making it one of the ideal ingredient for many keto recipes. So, keep in mind that this Keto diet is different from many other diets you know, and on a Keto diet, it is important to eat healthy fats.
Is chicken keto?
Generally speaking, chicken isn’t too keto, as it isn’t too fat. However, if you are using the roasted skin or chicken thighs with skin just as I did, it can quickly be introduced to a keto diet menu. If you follow a keto diet, try to eat more fatty meat such as pork, duck, turkey thighs, or beef.Â
Can I add eggs to keto chicken salad?
Paying attention to the protein intake, you can easily add whole eggs to any of your keto recipes. Eggs should be fresh, local, and pastured where you use them in any recipe at home.Â
What type of chicken can I use?
Here the possibilities are endless as you can easily use any chicken you have. For example, I have used some leftover chicken meat. Some shredded rotisserie chicken with a crispy/brown skin is more than ideal for this keto recipe. Other versions can be some chicken tights or canned chicken.Â
Keep in mind that chicken has to preserve the skin and should be cold as this salad is served cold.Â

I adore this simple keto chicken salad as it assembles quick and is gone fast. It is a great salad served in family or gatherings that pairs great with many other side dishes and due to its heartiness, it is one of my friend’s favourite salad on the table. It is healthy with useful and beneficial ingredients, and a low-carb salad recipe.
The ingredients:
- Half chicken breast meat
- 1 ripe avocado
- Some cherries
- 1 cup mayo
- 1 tbsp Dijon mustard
- Some arugula leaves
It is a simple salad that can be assembled in many ways. Today, I wanted to present a more fancy-looking salad that can also look this way.Â
I didn’t coat all the ingredients at once; I left my family to do it by themselves.Â
Took a large cutting board and cut the chicken meat.Â
Took a small bowl and mixed the mayo with Dijon mustard and added some cayenne pepper. I adore how it feels in the mayo dressing.
Take a lovely platter and lay all the ingredients nice and neatly. Start with green leaves, lay gently the meat, avocado, and half-cut cherries. Add the dressing and let everyone spoon in the amount he wants.
Simple and elegant.
I adore serving this way on occasions. When I make it just for my family, I coat all the ingredients in mayo dressing and let it sit for some minutes.
How long does it last?
 This salad can be easily kept in an airtight container for up to 2 days. I would not recommend doing this as it assembles in minutes, so keep in mind that a fresh salad is always the best option.Â
