Zucchini Roll-ups With Spinach & Cheese Wash and pat dry zucchini. Using a sharp knife, slice them carefully lengthwise to about 1/6 inch. Arrange the zucchini slices on baking trays and brush them on both sides with olive oil. Season lightly with salt. Send them to the preheated oven at 350 ​​°F for about 20 minutes.

  • Bake for 20 – 25 minutes until the cheese is bubbling and browned.
