Since I remember me, I was always a fish sandwich fan. Either tuna, pane fried white fish, herring, or baked salmon, my mom used to always make me some fish sandwiches. I adore fish, but wrapped with fresh veggies, with a lingering creamy sauce, and some pickles – what else to dream about?
For today’s recipe, I have used fresh herring fish that I have baked for no more than 10 minutes. Light flaky, tender and tasty herring fish served in a fresh baguette with veggies and a creamy sauce.
Why herring and not other fish?
Well, because it reminds me of my childhood years. I adore almost all kinds of fish, but baked herring is a little more fatty than other fishes and boasts more mega-3. It contains more omega than salmon or tuna fish. My daughter adores this fish in sandwiches and due to its healthiness I try to make it sometimes. Also, to make it taste less fatty, I squeeze a good amount of lemon and I add my secret ingredient.
Why is it so secret?
It isn’t a sacred secret, nor at least I know that not many people do it like me. I take 1 red onion and leave it to soak for some minutes in qualitative white wine vinegar. It as if gets a quick pickled-like taste and pairs with the baked herring more than just perfect – they are the best duo together. No other ingredient will complete the taste, nor will give such flavour and a balanced taste. Try my version and get convinced.

I am truly excited to present to you my today’s fish sandwich recipe that is so delicious, hearty, and flavourful. We are always looking for easy, quick, but tasty dinner recipes to work great on a daily basis. We all adore burgers. We scream more for them. So why not make fish sandwiches at dinner after a busy working day?
The ingredients:
- 2 or 4 fresh herring fish fillets
- Fresh baguette
- 1 red onion for marination
- Some cherry tomatoes round slices
- 1-2 pickle cucumbers
- Some green leaves, I have used lettuce
The creamy sauce:
- 1 cup of mayo
- 2-3 cloves of garlic, minced
- 1-2 tbsp of Dijon mustard or Sriracha if you want it spicier
Preheat the oven at 350F (180C). Take a baking tray and lay some baking sheet as the fish tends to leave some fat so it is much easier to wash it.
Place the fish on a plate and season with some salt, cayenne pepper, and black pepper. Place skin-side up the fish on the tray and bake for 10 minutes.
Meanwhile, wash the veggies and cut slices. Set aside.
Take a bowl and mix the mayo, minced garlic and the Dijon mustard.
Take the baguette and cut halves. Spread a good amount of sauce on both sides and start layering the sandwich.
Place the fish between the halves of the bread and squeeze a good amount of lemon. Transfer to a platter.
Serve it next to a tomato or Greek salad.
