Juicy tomato salad is one of the top summer salads with a refreshing taste. This simple, yet so healthy salad will make your tomatoes shine on your plates. 

When in summer tomatoes are in top form, are truly succulent, juicy and sweet they make any of your dishes taste amazing. A tomato salad is one of the most prepared salads in our house, and suppose that in your as well. This fresh, crunchy, and healthy salad will be a great side dish served at a picnic, potluck, or party. It pairs so well with some grilled meat or fish. I simply adore eating a beefsteak associated with some fresh sour/sweet tomatoes. Tomatoes with onion-like sister and brother – so simple and so perfect together.

The simple rule here lays in the fact that the freshest tomatoes are, the better the taste you will have. Nothing screams more summer and healthiness, like a bowl mixed with tomatoes and spring onions. One of the best tomatoes is end-of-summer that has that sweet/sour taste and makes the best, juiciest and rustic tomato salad. 

This is such a versatile salad that no ingredient will make it worse, on the contrary, it will only accentuate a more intense aroma. Cucumbers, feta cheese, avocado, anything more you have available in your fridge will perfectly pair with some fresh ripe tomatoes.

Are tomatoes healthy?

Tomatoes are one of the healthiest veggies available in your garden or markets. It is a low-calorie veggie with tons of benefits that contains a lot of water, fibers, and carbohydrates. Also, it is a good antioxidant and is one of the best fresh veggies that protects your heart and skin from cancer. I do remember my mom was always telling me to eat more tomatoes as they are super healthy and will prevent me from many diseases. I am also happy as I have convinced my daughter to eat as much as possible tomato fresh or in salads. She adores them in all ways.    

Since it is a low-carb and low-calorie veggie it is also included in the dietary menu. So, eating many tomatoes is one of the greatest things as they are truly healthy and delicious. Try to make a healthy habit by eating more veggies with health properties. 

What tomatoes to choose?

This delicious and juicy tomato salad can be made of different kinds of tomatoes. It is up to you to decide which one is better for you. For example in my house my husband buys all the vegetables. He adores the casserole with colorful cherry tomatoes – from dark green to pale yellow. 

However, here you can add cherries or grape tomatoes, or even those bigger size ones that have a sugar-taste. But, I will advise using small size cherries with a sweet taste and a thin skin. Thus, cutting these cherries in halves will be enough for a great salad.

How to make tomato salad?

Well, making a 5 minute delicious and healthy salad is probably my issue. I adore this quick and easy salad as it is loaded with flavors, easy to eat even in the evenings, and very healthy. 

First of all, I wash the cherries properly. I usually use 2 packs of cherries (200gr each – 0.4oz). 

Take a bowl and start to cut halves of cherries, then take a cutting board and chop the spring onion and 1 shallot. I mix 1 or 2 shallots with spring onion, as the spring onion has a more pronounced taste, while the shallots as if complete the taste. This trick is optional as you can either use shallot or spring onions. 

I toss the onion with cherries in 2tbsp of olive oil, 1tbsp of salt, and pepper, and some drops of Balsamic vinegar. 

So simple and so juicy that while I am cutting the cherries I can not stop trying 2 or 3 of them. The aroma is simply intoxicating and seducing. I really adore this easy and healthy tomato salad. 

Easily serve this great and super delish salad next to a juicy and tender beef steak, grilled fish, mashed potatoes as it will nicely and tasty complete the meal. Simply mad about this easy and great tomato salad.

 

How to store?

This best tomato salad is ready in just minutes. Just cut the tomatoes and onions and et voila, your aromatic and juicy salad is ready. Definitely, you can store this salad in an airtight container for a day, or until the evening but keep in mind it shouldn’t be salted and dressed. Tomatoes tend to leave much water when seasoned, so it is important when you freeze to make sure the veggies are sealed without dressing. Nonetheless, you will obtain a soggy messy salad. But, I will always repeat myself – the best fresh and juicy salad, ready in 5 minutes, is best served at the time you want to have it.

Tomato salad recipe:

  • Use any tomatoes you like the taste: either ripe heirloom tomatoes, cherry, or colorful cherries.
  • Toss the tomatoes and onion with much oregano species as the aroma is more accentuated and delightful.
  • You can freely add here avocado, yogurt, cucumbers, feta cheese, or anything else you like.
  • Add some drops of Balsamic vinegar, or substitute it with some lemon juice.
  • Basil – one of the best greenies that ideally pair with tomatoes. I add basil in my Caprese salad – you can check the recipe here.

Equipment

Ingredients
  

  • 2 packs cherries
  • 1 shallot
  • 3 spring onions
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 pinch pepper
  • 3 drops Balsamic vinegar

Instructions
 

  • Wash the tomatoes and wipe them with a paper towel.
  • Take a bowl and cut halves the cherries.
  • On a cutting board chop the spring onions and the shallots.
  • Mix the onion and the cherries together and toss them in olive oil, salt, pepper, and some drops of Balsamic vinegar.
  • Serve immediately.
