They instantly absorb all the flavours and aromas, making this simple soba noodle recipe taste fabulous and hearty. A famous side dish on my party table as it gets along with anything easily and tastily.

Soba noodles can be eaten cold as well; however, I try to eat them warm at the time I make them and cold if there are some leftovers.

Why soba noodles?

Since I have tried them for the first time in an Asian restaurant, I got in love with these soba noodles and their hearty texture. Healthy and useful are some perfect words describing soba noodles that resemble much whole-wheat spaghetti. Soba noodles are plant-based protein made of refined wheat flour, less caloric, and with an intense buckwheat taste and aroma. I adore buckwheat, and probably this is why I find soba noodles very special to me.

Soba originates from Japan, and like many Japanese ingredients, Soba is very healthy and beneficial. It is a vegan dish with low calories and a delicious taste if mixed with some simple but interesting ingredients.

What do you eat with soba noodles?

Soba noodles pair great with anything. You can add soba noodles in soups, salads, stir-fries, and others more. Look below:

Why are my soba noodles mushy?

Simple Sesame Soba Noodles The best question to this simple recipe is why they really get mushy? Soba doesn’t contain dairy products and shouldn’t be cooked al dente as it gets mushy if it is cooked for too long. Add some drops of olive oil or soy sauce to make them look nicer and separate. If you drain water and leave them for some minutes, you will notice that they look mushy and sticky. So try to instantly pour the vinaigrette to them to avoid this unpleasant moment.

This sesame soba noodle recipe is easy to make any weeknight at home. It is totally easy, fast, flavorful, and tasty. You can top some lemon zest and ginger zest for some freshness and more flavor.

How to make Sesame Soba Noodles?

Simple Sesame Soba Noodles Ingredients

Making soba at home is simple as you only need to boil them. However, the keys ingredients here lay in the vinaigrette that I have made. Toasted sesame adds the final touch of elegance and flavour. I adore sesame in dishes; however, toasted for 2-3 minutes on a dry skillet, they make this dish taste heaven and toothsome.

The ingredients:

  • ½ pack soba noodles

For the vinaigrette dressing:

Soba Noodles Dressing

  • ⅓ cup soy sauce
  • 2 tbsp rice vinegar
  • 1 cup toasted sesame seeds
  • 1 tsp black pepper
  • 2 tbsp honey or Agave syrup
  • 1 cup chopped spring onion
  • ½ cup chopped onion
  • 3 tbsp sesame oil
  • Two minced cloves of garlic
  • 1 tbsp grated ginger
  • Lemon juice
  • 1 cup of parsley

Even though the ingredients for the vinaigrette seem too many, trust me, they make this dish so flavourful, so delicious, and aromatic.

While soba noodles are boiling, take a bowl and mix all the ingredients for the dressing.

Simple Sesame Soba Noodles Adjust at taste to obtain a dressing that tastes delicious and tasty. For example, I am using a pungent soy sauce, so I have added more honey. Ginger and lemon adjust at the end to be sure it has a mild flavour and lovely at the taste.

Simple Sesame Soba Noodles Take a skillet and toss sesame seeds for 1-2 minutes until slightly golden.

Toasted sesame seeds Drain the water and lay them on a big platter. Pour the vinaigrette dressing over and mix well until they have incorporated. Garnish with toasted sesame seeds for a better taste and result.

Serve as it is or next to anything.

For note: you can eat them traditionally with wooden sticks or with a fork and spoon.

Enjoy.
