Russian Cabbage Pie is one of those treats you want to serve warm next to a glass of red wine. Even though it is a vegan pie, it is heavenly and tasty. 

Cabbage pie is one of those delicious cabbage meals you ever taste. Even though it is made of pretty simple and cheap ingredients like cabbage, carrot, and onion, it is just bursting with rich flavors. I like to serve this cabbage pie topped with a spoon of sour cream and some freshly chopped parsley.

Why is it called Russian Cabbage Pie?

Russian Cabbage Pie is a traditional Russian recipe made of sauteed cabbage and carrot sandwiched between yeast pastry layers. Actually, cabbage is a popular vegetable across the whole world. It is cheap, healthy, and, why not, tasty.  Eastern European cuisine, in particular, is famous for its cabbage recipes. They know how to impress with delicious recipes of cabbage, and there is a wide variety of them.

cabbage pieThis cabbage pie recipe caught my eye once I saw it, and I was tempted to make it at home to please my family. It is a simple recipe, yet it needs some time, patience, and love. 

Cabbage Pie:

Doughs are usually my comfort zone, so pies, bakeries, or cakes are always welcome in my house. This recipe was on my wishl-ist for a long time and turned out to be super soft, spongy, and delicious. A piece of warm cabbage pie to savor the moment. 

cabbage pieMany of you may think, why cook such a pie at home when it is so simple to buy one in the bakery store?! Yes, you are right. But, sometimes, baking at home will ease your stress and make you more patient and calm. Well, this is probably how I feel when I start making dough and baking at home. Sometimes I need this time to get my moment and to feel like a real mom and woman when I see my family satisfied with what I cook for them.

The Cabbage Pie is ideal for a snack with family and friends. This pie is preferably served warm.

Yeast Dough for Cabbage Pie:

cabbage pieAny yeast pastries begin with the dough preparation. For this cabbage pie, you will need two batter portions, one going to the bottom and another to the top. You can double the amount of ingredients and make it in one dish, and before assembling, just divide it into two equal parts. Or, from the start, make it in two separate bowls, as I did. Pour one cup of warm water into a mixing bowl. Stir in two tablespoons of sugar and one teaspoon of dry yeast. Use active dry instant yeast, which helps the dough rise fast. Once the sugar has melted, leave the leaven to ferment for about 5-10 minutes.

Pour the leaven over the sifted flour. Add salt and oil and mix well. You should get a liquid dough. Cover with a piece of cling film and then top with a towel. Set aside to rise for about 40 minutes.

Repeat for one more portion.

How do you make filling for Cabbage Pie:

While the dough is rising, prepare the cabbage filling. Heat some olive oil in a large skillet. Once the oil is hot, add chopped leek and shredded carrot. Saute until vegetables soften, and then add shredded cabbage. Season with salt, freshly ground pepper, ground coriander, and garlic powder. You can add here a touch of chili. Saute for about 10 minutes or until cabbage is soft, stirring often.

How to assembly Cabbage Pie:

Grease with butter or oil a round baking tray (it can be a skillet/pan oven-safe use). Pour one dough portion into the baking pan’s bottom and spread evenly. Next, gently spread the cabbage filling over the batter. In the end, pour the second portion of the batter on top of the filling and spread evenly. Sprinkle some sesame seeds if desired. Bake in preheated oven at 350 °F for 40-45 minutes.

Serve cabbage pie warm, topped with a spoon of sour cream if desired.
