So, in a bowl, combine 1 ⅓ cup of all-purpose flour, ½ cup brown sugar, ½ teaspoon baking powder, ¼ teaspoon baking soda, a pinch of salt, and 1 tablespoon cinnamon powder. Once dry ingredients are thoroughly mixed, add 2 tablespoon vegetable oil ( or substitute with melted butter), one egg, and 1 cup of milk. Whisk well until just combined. Make sure you do not overmix the batter, otherwise you will get dense and dry muffins! While you are preparing the baking tray, set aside the batter to rest.
Combine ½ cup of granulated sugar with 2 tablespoon cinnamon powder. Grease 24 mini-muffin pan with butter. Then sprinkle with cinnamon sugar. Spoon the batter into prepared mini muffin tin, filling each liner ¾ of the way entire. Sprinkle each muffin with a generous amount of cinnamon sugar.
