Cinnamon muffins are the softest, sweet, and flavorful mini cakes to enjoy for some days. With a simple combination of ingredients, you obtain one of the most fantastic snacks that my kids simply adore and fond of. Feel free and make a large batch of muffins to serve throughout the week.Â
These recipe ingredients will yield 24 mini muffins. If you prepare them for a big crowd or ahead for a whole week, double or triple the ingredients.
Preheat the oven to 375 °F.Â
You do not need any kitchen appliances for this easy recipe, like a stand mixer or electric whisk. A regular whisk and a large mixing bowl are more than enough.
So, in a bowl, combine 1 ⅓ cup of all-purpose flour, ½ cup brown sugar, ½ teaspoon baking powder, ¼ teaspoon baking soda, a pinch of salt, and 1 tablespoon cinnamon powder. Once dry ingredients are thoroughly mixed, add 2 tablespoon vegetable oil ( or substitute with melted butter), one egg, and 1 cup of milk. Whisk well until just combined. Make sure you do not overmix the batter, otherwise you will get dense and dry muffins! While you are preparing the baking tray, set aside the batter to rest.
Combine ½ cup of granulated sugar with 2 tablespoon cinnamon powder. Grease 24 mini-muffin pan with butter. Then sprinkle with cinnamon sugar. Spoon the batter into prepared mini muffin tin, filling each liner ¾ of the way entire. Sprinkle each muffin with a generous amount of cinnamon sugar. Send mini cinnamon muffins to the preheated oven and bake for 10 minutes.
Once muffins are nicely browned, remove them from the oven and sprinkle them with extra cinnamon sugar still hot.
