I hate throwing away products, but my habit of buying everything I see on my way at our local farmers market makes this impossible. Fruits and vegetables spoil pretty quickly, and I don’t get to use them all. For this reason, I always think of different recipes to use fruits and vegetables before they rot. Usually, I chop the vegetables and send them portioned to the freezer – ready for soups, frittatas, or stews. While the fruits, in most cases, go for desserts, such as cobblers, crumbles, cakes, or jams.

It is extraordinarily appealing, fragrant, fluffy, and slightly moist. Furthermore, this recipe is delicious and undemanding to make without even turning on the oven. For a better taste, you can add nuts, dry berries, and/or chocolate chips. However, my favorite version of banana bread is the traditional one.  

It is extraordinary! For this banana bread recipe, the bananas must be as ripe as possible. So if they have darkened, it is even better because that is when they’re the sweetest. In this case, you will need less sugar, and that is always a good thing.

What is the cake setting on instant pot?

Instant Pots have various programs to help you cook more efficiently. Although, not all models have the same set of programs. So, do not worry in case your model does not include the cake setting. You can still easily make a cake in your Instant Pot using the manual button or pressure cook.   

Accessories to make Instant Pot Banana Bread:

Instant Pot Banana BreadTo make this Instant Pot banana bread, you will need some accessories that are usually provided with purchase. The first thing you will need is a Trivet that you will use to support a pan. But in time, I discovered that it is much easier to lift out the pan from Instant Pot, using a silicone sling instead of Trivet. This cheap accessory can be purchased separately but will make it much handier.

Another accessory that is indispensable for making Instant Pot banana bread is a 7″ springform pan. Here you also have an alternative. Instead of it, you can use 6 Cup Bundt Pan or any other pan that fits in your Instant Pot. When baking cakes, I prefer silicone molds as it is easier to remove than the cake from it, and you almost do not have to clean it up.

This bread is a real king among comfort food recipes, especially for the reason you do not have to switch on the oven. Actually, since I bought my Instant Pot, it serves me regularly as a lifesaver, now not only for quick dinners but also for desserts. 

When a batch of ripe bananas waits to be used, and I am looking for a breakfast recipe to kick off my day with plenty of energy – then I make banana bread! After multiple experiments with various recipes, I found a couple that I like the best. So depending on what ingredients I have on hand, I make my banana bread. Lately, I shared with you the banana bread recipe full of nuts and butter. But today, I want to delight you with a recipe that requires pretty simple ingredients. And believe me, the result will be beyond your expectations.

Instant Pot Banana BreadThe batter for this bread starts with preparing the bananas. In a mixing bowl, using a fork or handheld masher, mash up tree overripe medium bananas. Add ¾ cup of sugar, two eggs, and seeds of one vanilla bean (or 1 tsp of vanilla extract). Using a mixer, whisk for about 5 minutes until sugar dissolves completely. Once you have a fluffy texture mixture, whisk in 1 tsp baking soda and a pinch of salt. Now using a spatula, gradually incorporate 1 ⅓ cups of flour. Then pour ⅓ cup of milk and ¼ cup of oil. Mix gently to combine.

Instant Pot Banana BreadGrab a pan and grease the sides with butter, then sprinkle some flour. Pour the batter into the pan. Top with some banana slices. Cover the bread with foil, leaving space for rising, but pinch the edges tightly.

How to bake Banana Bread in Instant Pot?

Add 1 cup of water to your Instant Pot. Set the Trivet on the counter, and arrange the pan on it. Carefully introduce it in the pot using the handles. Secure the lid and set the steam release knob to the Sealing position. Set Pressure Cook/Manual button for 55 minutes. Once the time is over, allow natural pressure release, for about 10 minutes.

Instant Pot Banana BreadCarefully open lid and remove the cake from Instant Pot. Carefully take off the foil and leave the bread to rest for some minutes, then remove it from the pan. Sprinkle some sweet cocoa or shredded chocolate.
