Roasted tomato spaghetti is a simple and easy dish infused with flavours and pleasant aromas.Â
Spaghetti with cherries – sound easy and cheap, but this is the key to some of the tastiest meals.Â
All of us have spaghetti or pasta at home, cherry tomatoes and some herbs. These simple ingredients are never missing from my kitchen; moreover, you can substitute any ingredient based on what you have available. I have added some basil leaves, as I simply adore the basil’s freshness, but you can skip this moment.Â
In my house, pasta is always the most welcome dish. My daughter is a pasta fan, she adores pasta and always asks me to boil her pasta with anything.Â
Whole-grain pasta is the best option when selecting which one is better and healthier.
In my family, we crave pasta weekly, but my daughter, if I allow her, will eat them every day. Pasta pairs excellent with many ingredients and is always a cheap idea when you are tired but want something delicious and easy.
The flavorful garlic is fabulous next to cherries. Here you can add heavy cream, parmesan or keep it dairy-free, just like me.
Many still bake tomatoes as an alternative; however, I like roasting them in lots of garlic, pepper flakes, and thyme. It emanates an outstanding aroma in my kitchen with bursting flavours and colours. Such a nice roasting tomato red colour that it instantly catches your eyes.Â
My husband always looks sceptical about such simple dishes; however, I, and my daughter could probably eat them every day.
This is a simple comfort dish with amazing colours and flavours. It is one of those easy dishes I make on my go-to summer recipes. This roasted tomato spaghetti you can eat cold, as well.Â
Not too much mess and imagination, just qualitative ingredients, sweetest cherries, and your dish will win any heart.
Can I use dried herbs?
Sure, you can use dried herbs but pay attention to the amount you add to avoid too intense aromas. But the freshest basil has one of the best aromas. I simply go mad about it.Â
What kind of pasta can I use?
Spaghetti is the simplest option when making this dish. But, you can easily add any other kinds of pasta, as well as whole-grain, gluten-free, or semolina pasta. Â
Which type of oil is best to use?
For this dish, the best oil to use is the extra virgin one as you will savour pasta in garlicky oil. So try to add a good quality oil to maintain a healthy way of life.
Can I use larger tomatoes?
Sure, you use any tomatoes you like. I have used cherry tomatoes as I like to use them whole and watch how they split, but if you use larger tomatoes, then you have to cut them in two or four.Â
Can I prepare the tomatoes in advance?Â
Yes, you can, more other, you can cook them 1-2 days ahead. When you want to serve them, just pour over the boiled/hot pasta and serve topped with some basil leaves or parmesan.Â
How much pasta do I need per person?
This is a good question, but I usually don’t pay attention to the ratio and norm.Â
Suppose speaking about the right proportion, then 50 g of pasta per person is okay; if your family or guests adore pasta, then easily boil 100g.Â
How to make roasted tomato spaghetti?
Easy as it sounds. Some 15 minutes and your house smells heavenly. I adore garlic in all my dishes, and pepper flakes as well. They add that touch of quality, difference, and accentuates some deep flavours turning that simple cherry spaghetti recipe in something magical and unique.Â
Half pack of spaghetti, some cherry tomatoes, garlic, flakes, thyme, and your dish is ready to enjoy.Â
Take a pot and boil spaghetti al dente as mentioned on the pack. I usually add sea salt and 2-3 drops of oil while the water is boiling, before adding pasta.
Take a skillet and at medium heat pour oil and coat it in garlic, thyme, and pepper flakes. Some 2-3 minutes.Â
Add pasta to the skillet and turn off the heat. Add some basil leaves, optional, and mix well until all the ingredients have incorporated and infused all aromas and flavours.Â
Take a plate and neatly pour tomato spaghetti and enjoy with a fork and spoon.Â
